In 4-H, it includes treating the traditions of the program, other members, volunteers, parents and judges like you would like to be treated. Don’t engage in disrespectful conduct including verbal abuse of other competitors and judges. Win with grace and lose with dignity! As Respectful Exhibitors we: Accept and tolerate exhibitors with projects different than ours Value and honor the decisions of judges and show officials Regard the property of other exhibitors, facilities and equipment Take pride in our projects and keep our areas clean Are courteous and polite to fellow exhibitors, volunteers, and the community 4-H Activity Simon Says, “Who Are You? Explain to members that they will play a version of Simon Says in which only some members will respond to each command. Tell them that they must watch carefully as they play the game because at the end, each member must tell one new thing they learned about a classmate. Have junior leaders start a game of Simon Says providing such directions as Simon says "Everyone with brown eyes, stand up." Simon says "Everyone who has a dog as a pet, put your right hand on your head." Simon says "Everyone who speaks more than one language, jump up and down." At the end of the game, have all members sit in a circle. Ask each member to name one way in which he or she and another member are alike. The trait they share must be something they didn't know before playing the game. Members might say, for example, "I didn't know that Katie spoke Spanish" or "I didn't know that Jose was left-handed." Cost Cutter: Make Your Own Stock A great way to save money and decrease sodium consumption is by creating homemade stock for soup and other dishes. Save extra pieces of onion, carrots, celery, and herbs, like rosemary or thyme, to simmer with beef, veal, lamb, or chicken bones. It takes some time to create, but the end result is quite tasty and you get to decide how much salt to add. Store-bought stocks are easy to use, but they are often expensive and full of sodium. Foody Safety: Remember to Chill Refrigerating foods is a key component of food safety. Cold temperatures slow the growth of harmful bacteria. Avoid over-stuffing your refrigerator so the cold air can easily circulate to keep the food safe. The temperature of the refrigerator should remain at 40 degrees Fahrenheit or below and your freezer temperature should be at zero degrees Fahrenheit or lower. Don’t forget to refrigerate or freeze perishable foods as soon as you get home from the grocery store. Use only ingredients listed in recipes. Substitutions, unless specifically indicated, can cause failures. 2. Measure ingredients in standard measuring cups. For liquids, use glass cup with pouring lip. For dry ingredients and shortening, use nested set of 1, ½, 1/3 and ¼ cup sizes. 3. When directions call for sifted flour, sift before measuring. Pre-sifted flour should also be sifted before measuring. Spoon sifted flour lightly into dry measuring cup and level off with straight-edged spatula. 4. Pack brown sugar or shortening firmly into cup before leveling it off. When recipe calls for hydrogenated shortening, used canned, solid, vegetable shortening such as Crisco. 5. Measure liquids by placing cup on level surface. Be sure to read level of liquid through side of cup. 6. Use double-acting baking powder. Look for the words “double-acting” on the can. 7. Use large eggs. 8. Read all directions carefully before starting. Follow them step by step. 9. Use correct size of pan. Measure pans across top from one inside edge to opposite inside edge. 10. Bake at correct temperature. Check thermostat with accurate oven thermometer. A 25 degree variation in baking temperature may cause an inferior product. 11. Preheat oven while mixing For more information, tips, and specific recipes, check out the Baking at High Altitude publication (B-427) from the University of Wyoming Extension Service.
