As we all love the combination of food and wine, I have listed my favourite wines
from around the globe on the last two pages of this menu.
Our South African Wines are a Fine Selection from

A classis among Rioja Classics for the most demanding palates.

Note:
In Spain vitcultural fashion has shifted towards Tempranillo and Cabernet Sauvignon
in the 21th Century, though Monastrell is regaining some of its former importance.
At one time Monastrell was the second-most planted red grape variety in Spain, behind
Its blending partner Garnacha. The wines are big and dark, frequently showing blackberry
and black cherry flavours.

Near the Southernmost point of Africa lays a valley named Hemel-en-Aarde (Heaven and Earth)
framed by mountains and within sight of the ocean, with frost free, soft, beneficial weather and
the most perfect clay shale vineyard soils. Established in 1989, Bouchard Finlayson is a boutique
winery (125-hectare property currently has 22 hectare under vine)dedicated to making wines of
outstanding quality. Located in the wine region of Walker bay, in the Hemel-en-Aarde Valley
ward, an hour and a half from Cape Town, behind the enchanting coastal town of Hermanus.
Renowned wine maker Peter Finlayson brings you Burgundian-inspired Pinot Noirs and

The geographic location of the winery, lying within five kilometres of the cool
Atlantic Ocean offers the best temperature zone that the Cape can contribute to a

parallel fruit calling one straight back to the glass!

The rich characteristic of this wine stems from clay based soils at the vineyard
location in the Elandskloof Valley of Villiersdorp. This unoaked version of chardonnay
has an emphatic fruit purity, minerality and length from tantalizingly luscious acidity.
Strong hints of peach and kiwi fruit with a few drops of lemon.

This Chardonnay offers a general display of balance and equilibrium not too robust but
Eloquently perfumy on the nose. Fermented in classis Burgundian fashion and then matured

hint of butterscotch flavour all help to build nuance and depth.

Missionvale is not not an exception. Once again characterised by a relatively soft finished
and seamless mouth feet. Aromatic with flowery vanilla tones, structured on a golden
layer of apricot and aoquat fine flavours. Maturation will enhance its personality.

Pinot noir arguably plays its biggest role in the arena of winemaking by way of its role as the
major component of French Champagne. Fine red wines made from Pinot noir have their respect
from selective sites on the Hills of Gold in Burgundy, France. Here in the Hemel-en-Aarde
Valley near Hermanus the Pinot noir grape has enjoyed consistent success which offers
undeniable support for the claim that this valley is Africa’s benchmark location for this fine
grape variety. To build on these ideal conditions I have taken advantage of this opportunity to
make a special blend by utilizing the best barrels in the cellar for a smaller unique
bottling! These limited release bottlings are called Tête de Cuvée.
The 2005 vintage was an excellent summer which presented cool conditions and allowed for
ideal Pinot noir ripening. The Pinots from this vintage have proved to offer fantastic fruit driven
wines. This is the sixth Tête de Cuvée release since 1997 and follows in the tradition of blending
a handful of the best barrels to carry this title. In this case it is twelve barrels!
Appealing on the nose with whiffs of Raspberry, cherry and oaky plum. Rich, long on the palate
with full bodied firm harmonious structure ending in layers of velvety tannins which act as a
guarantee for many years of positive development.
Pinot noir is the most food flexible varietal. Its richness comes from a multitude of layers of
flavour. Enjoy with fish, poultry, game and red meat dishes

grippy tannin.

This wine has a brilliant crimson cherry hue. The nose has elegant and attractive
aromas of red cherry, strawberry and earth. The palate is also reminiscent of
strawberry but tends towards black rather than red cherry and slightly tart plums.
The palate also exhibits forest floor characters and a firm yet subtle backbone of
Palate-covering tannin.

This is a great champagne, in the bottle-aged Henriot style. It’s a classic
Chardonnay, ripe, creamy, packed with yellow fruits, and finely balanced
with a great waft of toast. A high percentage of older vintages in the blend
gives this wine richness, maturity, without ever losing its crisp edge.

Well defined, subtly rounded with expressive flavours. The fruit progressively
emerges to reveal a finely balanced champagne displaying great length on the finish.
The colour is a pale golden hue, with fine and persistent bubbles. The nose is fresh
And delicate, showing good complexity with hints of citrus and white fruit.
Note:
The world wine list reflects me in many different ways; it gives me memories, marks
milestones in my life and lets me look into the future.
One of the best memories I have is enjoying a bottle of Laurent Perrier Rose with my wife
Paulina in front of our house in Donegal and watching the sunset over the Bay.
