Milwaukee Country Club, a private member owned club formed in 1894, is considered the premier old line
country club of Milwaukee. In 1911, the Club moved to its present bucolic setting on nearly 200 acres in River
Hills, Wisconsin. The existing golf course, designed by Harry Colt and Charles Alison, has undergone
renovations by Robert Trent Jones in 1974 and most recently by consulting architect Tom Doak to remove trees
and open up views of the river from many upland holes. The golf course is consistently ranked by Golf Digest
as one of the 100 Greatest Golf Courses in America.
The 18-hole par 72 golf course is a classic tree-lined layout and measures 7,097 yards. The Club hosts
approximately 14,000 rounds annually and also features a practice range and short game area. Additional
amenities include: 15 guest rooms, nine asphalt tennis courts, two paddle tennis courts, two croquet courts, an
Olympic size pool, pool house, snowshoeing, sledding, cross country skiing, summer camp, and junior
programs in golf, tennis and swimming.
The well-appointed stately clubhouse measures 60,000 square feet and features formal and informal dining in
various outlets. The Club has recently added a new informal grill room and bar area. Additionally, the pool
pavilion was renovated and opened in June 2014 to offer more casual dining options. The Club is open year
round with the exception of March. Gross revenue is $6 million with $1.5 million derived from food and
beverage sales. There are approximately 120 employees during the height of the season and staff housing for up
to 20 employees.
Reporting to the Assistant General Manager, the Men’s Locker Room Manager is responsible for operations
plus leadership of the Men’s Locker Room (which includes bar and dining outlets) in a manner most pleasing to
members and guests. The Men’s Locker Room Manager will be held responsible for meeting revenues and
expense budget goals, supervising and training Men’s Locker Room department personnel, monitoring
inventory levels and developing/implementing operating procedures for the Men’s Locker Room department.

The Men’s Locker Room Manager must exhibit a high level of personal and professional decorum, have a
passion for food and beverage and be able to foster a culture of excellent service throughout his staff. He must

Position
Men’s Locker Room Grill Manager
Job Summary
Responsible for supervision of dining service in the locker room in manner most pleasing to
members and their guests. Assure a high standard of appearance, hospitality and service in personnel
and cleanliness of facilities. Assist management in the training of staff; manage within budgetary
restraints; develop/implement programs to increase revenues (repeat business and higher check
averages).
Job Tasks (Duties)
1. Serves members and guests when required
2. Helps staff with cleaning duties in the facility
3. Assists with guest locker and dining reservations and checks locker reservation schedules
4. Greets and guides members to lockers and seats members and guests
5. Carefully supervises dining room staff to help assure proper service; takes orders when
necessary
6. Works as bartender and closes Bar as needed
7. Inspects dining room employees to ensure that they are in proper and clean uniforms at all times
8. Assist in hiring, training, supervising and evaluating locker room staff
9. Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, etc.
10. Receives and resolves complaints concerning food, beverages, and service
11. Serves as liaison between the dining outlet of locker room and kitchen staff
12. Assures that all side-work is accomplished and that all cleaning of equipment and storage areas
is completed according to schedule
13. Directs pre-meal meetings with locker room personnel. Relays information and policy changes
and briefs personnel
14. Assures the correct appearance, cleanliness and safety of locker room areas, equipment and
fixtures. Checks the maintenance of all equipment in the dining room and reports deficiencies
and maintenance concerns
15. Makes suggestions about improvements in dining room service procedures and layout
16. Produces reports from the Point of Sale system(s) used in the locker room
17. Assures that the locker room and other club areas are secure at the end of the business day
18. Maintains an inventory of locker room items including silverware, coffee pots, water pitchers,
salt and pepper holders, sugar bowls and linen and ensures that they are properly stored and
accounted for
19. Develops and maintains the locker room reservation system
20. Monitors dining room labor and supplies budget; makes adjustments as necessary to achieve
financial goals
21. Develops and continually updates and refines policy and procedure manuals for service staff to
increase quality and to control costs
22. Assists in service and tableside cookery as needed
23. Attends committee, management and scheduled staff meetings when requested
24. Performs other duties as requested by management
