Create a bang this fourth of July with these low-fat
cheesecake cupcakes and let the fireworks begin. Not only
do they look great, they taste great too!
Juvenile arthritis (JA) is an umbrella term for autoimmune
conditions and/or pediatric rheumatic diseases that impact
children under the age of 16. There are various types
of JA, each producing a unique set of symptoms and
concerns. Unfortunately, there are no known causes for
most forms of JA, yet research indicates it may be genetic.
A Dessert Fit for Celebrating
Ingredients: yields 12 servings
• 12 reduced fat vanilla wafers
• 8 oz. 1/3 less fat cream cheese, softened
• 1/4 c. sugar
• 1 tsp. vanilla
• 6 oz. fat-free vanilla Greek yogurt
• 2 large egg whites
• 1 tbsp. all purpose flour
• 8 oz strawberries, hulled and sliced thin
• 8 oz. blueberries
Directions: Preheat oven to 350°F
1.Line cupcake tin with liners. Place a vanilla wafer at the
bottom of each liner.

In some cases, diagnosing a child with JA can be a lengthy
process. If you suspect your child may have a form of JA,
please see your doctor for a complete physical exam. It’s
especially important that symptoms be identified early and
children receive an accurate diagnosis in order to begin
treatment.

2.Gently beat cream cheese, sugar and vanilla until
smooth.
3.Gradually beat in fat free yogurt, egg whites, and flour.
Pour into cupcake liners filling half way.
4.Bake 20-25 minutes or until center is almost set. Cool to
room temperature then chill 1 hour in the refrigerator.
5.Before serving, top with fresh strawberries and
blueberries.
Extra tip: If you’re taking these to a party, stick an
American flag toothpick in each cupcake to boost your
presentation!
