Each week we will be sending you 10 recipes to enjoy. This includes 6 main dishes, 2 side dishes, and 2 desserts. This weekly menu is just a suggestion, but you can mix and match the recipes as you please! The shopping list attached only includes the ingredients needed to make the 10 recipes in the menu plan, with a few optional side dish options. Here is this week’s menu: Asian Chicken Lettuce Wraps with Steamed Carrots / Peanut Butter Cookie Dough Bites Loaded Nacho Casserole with Green Salad BBQ Bacon Pulled Pork with Balsamic Green Beans and Mushrooms Hawaiian Haystacks / Fluffy Frozen Strawberry Dessert Chicken Bacon Artichoke Pizza with Breadsticks LEFTOVERS Parmesan Pork Chops with Honey Roasted Red Potatoes Asian Chicken Lettuce Wraps Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients: ½ cup chow mein noodles 2 cups Tyson Grilled Chicken Ready Strips 3 green onions, chopped ½ cup red cabbage ¼ cup sliced almonds ⅓ cup asian sesame salad dressing 5 large romaine lettuce leaves 2 cups steamed carrots (opt. side) Directions: In a bowl, toss together noodles, chicken, onions, cabbage, and almonds. Add salad dressing and toss until everything is coated. Scoop ½ cup mixture onto each lettuce leaf. Optional side dish: steamed carrots Loaded Nacho Casserole Serves: 4-5 Prep time: 30 mins Cook time: 25 mins Ingredients: ½ pound lean ground beef ½ large onion, diced ½ green bell pepper, diced 1 (14 ounce) can diced tomatoes, undrained ½ (15 ounce) can black beans, rinsed and drained ½ (15 ounce) can pinto beans, rinsed and drained ½ (11 ounce) can corn, drained ½ (8 ounce) can tomato sauce ½ (4 ounce) can diced green chilis ½ (1 ounce) envelope taco seasoning ½ (10 ounce) bag tortilla chips 1 cup shredded cheddar cheese 1 (14.5 ounce) bag green salad (opt. side) Ranch dressing (opt. side) Directions: In a large skillet, cook the beef, onions, and peppers over medium high heat until meat is not longer pink and vegetables are tender. Stir in the tomatoes, beans, corn, tomato sauce, chilis, and taco seasoning and bring to a boil. Reduce heat to low and let simmer for about 20 minutes. Preheat oven to 350 degrees F. Spray a 8x8 inch baking pan with nonstick cooking spray. Layer half of the tortilla chips in the bottom and layer with half of the meat mixture. Repeat layers and then top with shredded cheese. Bake uncovered for about 20-25 minutes or until the cheese the melted and the casserole is heated through. Optional side dish: green salad with ranch dressing BBQ Bacon Pulled Pork Serves: 4 Prep time: 10 mins Cook time: 10 hours Ingredients: 1 (2 pound) pork roast ½ onion chopped ½ cup of BBQ sauce 1 cup of Coca Cola ¼ cup of bacon bits 4 hamburger buns Directions: Place pork roast on the Slow Cooker. Put chopped onions on top of the pork roast add 1 cup BBQ sauce on top of the onions, then pour on your Coca Cola. Cook on low for 8 to 10 hours. Minutes before serving, shred your pork and add your bacon bits. Mix well and let the bacon bits get warmed through. Serve over hamburger buns.. Hawaiian Haystacks Serves: 4 Prep time: 15 mins Cook time: 5 mins Ingredients: 1 (10.5 ounce) can cream of chicken soup ¼ cup milk 2 chicken breasts, cooked and diced 2 cups rice, cooked Toppings: 1 tomato, chopped 1 (2.25 ounce) can sliced olives ½ cup chow mein noodles ½ (8 ounce) can pineapple chunks 1 cup shredded cheddar cheese ½ green pepper, chopped Directions: Mix cream of chicken soup and milk in a sauce pan until smooth.​

Chicken Bacon Artichoke Pizza Serves: 4 Prep time: 20 mins Cook time: 15 mins Ingredients: 1 refrigerated pizza crust 1 cup alfredo sauce 1 ½ cups mozzarella cheese 2 chicken breasts, cooked and cubed 8 slices of bacon, cooked and crumbled 1 (2.25 ounce) can of sliced olives 1 (6 ounce) jar artichoke hearts, drained and chopped 3 green onions, thinly sliced 4 breadsticks (opt. side) Directions: Preheat oven to 375 degrees F, or temperature directed on pizza crust package. Roll out pizza dough onto a baking sheet. Spread alfredo sauce over crust. Sprinkle on cheese and top with chicken, bacon, olives, artichoke hearts, and green onions. Bake for 15 minutes, or until crust is golden brown. Optional Side: breadsticks Parmesan Pork Chops Serves: 4 Prep time: 10 mins Cook time: 20 mins Ingredients: ½ cup italian seasoned bread crumbs ½ cup grated parmesan cheese 1 teaspoon season salt salt and pepper, to taste ¼ cup milk 4 boneless pork chops Directions: Preheat oven to 375 degrees. Grease a 9x9 inch pan with cooking spray. In a small bowl, mix together bread crumbs, cheese, season salt, and salt and pepper. Pour milk into a separate, shallow bowl. Dredge each pork chop through the milk, and then through the crumb mixture, making sure each is completely coated. Place the pork chops in the pan. Bake for 8-10 minutes on each side. Balsamic Green Beans and Mushrooms Serves: 3-4 Prep time: 5 mins Cook time: 20 mins Ingredients: Directions: 4 ounces mushrooms, sliced ½ pound fresh green beans, ends cut off ½ Tablespoon olive oil ½ Tablespoon balsamic vinegar Preheat oven to 450 degrees F. Line a baking sheet with aluminum foil, spread mushrooms and green beans on the baking sheet, then drizzle with olive oil and balsamic vinegar. Toss with your hands to coat. Cook for 20 minutes, until the beans have started to brown and soften. Honey Roasted Red Potatoes Serves: 3-4 Prep time: 10 mins Cook time: 25 mins Ingredients: 4 red potatoes, diced into ½" squares 1 Tablespoon olive oil 1 Tablespoon honey ½ Tablespoon dried onion ½ teaspoon dry mustard salt and pepper, to taste Directions: Preheat oven to 450 degrees F. Place diced potatoes on a foil-lined, greased baking sheet. Drizzle the olive oil and honey over the potatoes. Sprinkle the dried onion, dry mustard, salt, and pepper over top. Toss the potatoes until they are covered with the other ingredients. Bake for 25 minutes until tender, stirring them every 10 minutes. Peanut Butter Cookie Dough Bites Serves: 4 Prep time: 30 mins Cook time: 1 min Ingredients: ¼ cup peanut butter ⅛ cup butter softened ⅛ cup sugar ¼ cup brown sugar ½ teaspoon vanilla ¾ cups flour ½ cup chocolate chips Directions: In a medium sized bowl combine peanut butter, butter, sugar, brown sugar and vanilla until fully mixed together. Then slowly add in the flour and continue to mix until the mixture is a thick dough consistency. Roll the dough into 1 inch bites and place on a lined or greased plate or cookie sheet. Freeze for about 20-30 minutes. In a small, separate, microwave safe bowl, melt the chocolate for one minute (continue microwaving in 30 second intervals until it is completely melted). Remove frozen cookie dough from freezer and dip one side in chocolate and set back on the covered plate/cookie sheet. Repeat this for all the cookie dough, and place in fridge until hardened and ready to eat Fluffy Frozen Strawberry Dessert Serves: 6 Prep time: 6 hours 20 mins Cook time: 15 mins Ingredients: Directions: ½ cup flour ⅛ cup brown sugar ¼ cup butter, melted ¼ cup walnuts, finely chopped 1 cup fresh strawberries, diced ¼ cup sugar ½ teaspoon lemon juice ½ (8 ounce) container Cool-Whip Preheat oven to 350 degrees F. In a bowl, combine the flour, brown sugar, butter, and walnuts. Mix together and spread out on a small cookie sheet . Cook for about 8-10 minutes, stirring 2-3 times during baking. Let cool for about 5-10 minutes, remove ¼ cup to use for later, and press the rest of the nut mixture into a 8x8 inch baking pan that has been sprayed with nonstick cooking spray. In another bowl, mix together strawberries, sugar, and lemon juice. Fold in the Cool-Whip and spread over the cooled crust. Top with the reserved ¼ cup of nut mixture, sprinkled over the strawberry filling. Cover and place in the freezer for at least 6 hours.
