Fresh Fruit Cutting Best Practices (Oranges) Fresh cut fruit is easier and more convenient to consume. As a result, students are more inclined to choose the fresh fruits offered; therefore partaking of the vital nutrients found in fresh fruit. In an effort to ensure the best product for our customers, the following illustrations and instructions are offered as a guideline to ensure safety of personnel, safeguarding of equipment, and work efficiency. Step 1 Place oranges into a Run cold water colander. over the oranges; moving the fruit around using your hands to ensure all are washed thoroughly. Discard a ny defective fruit. Step 2 Using a large food grade bag, line the top and bottom of the fruit box. Place the washed oranges in the lined box top. Step 3 To work more efficiently, set up your work station as illustrated above. Working from the left to the right, place the box of washed oranges, portion bags, fruit sectionizer, and lined box bottom. Step 4 Place an orange onto the blade cup with the stem and navel lying to the side. Gently release the sectionizer handle, to sit the plunger onto the orange without cutting the fruit. Step 6 Pull down the handle with your right hand and catch the orange slices with your bagged left hand. Step 7 Using both hands, pull the bag over the fruit, securing with a flip fold. Step 8 Place the bagged cut fruit into the lined box bottom. Repeat steps 1-‐8 until the case in completed. Remove the bag from the box top and place onto the case bottom. Step 5 Place a small food bag inside out over your left hand and place your hand underneath the sectionizer shoot. Do not touch the bottom of the blade with your hand.
