Coconut Granola Bars

Coconut Granola Bars
Ingredients
2 ½ C. Old Fashioned Oats
1 C. Whole Wheat Flour
1tsp. baking soda
1 tsp. vanilla extract
4 oz. Applesauce (we used
chopped apples)
2 Tbsp. Flaxseed
¼ C. Honey
1/3 C. Light Brown Sugar
¼ C. Pecans, slivered
¼ C. Almonds, slivered
¾ C. Shredded Coconut
Method of Preparation:
1. Preheat oven to 325* Prepare 9X13 jelly roll pan. Line with parchment paper or lightly coat with vegetable oil.2. Blend eggs and oil
in a mixing bowl.
3. In large mixing bowl, combine oats, flour, baking soda, vanilla,
applesauce, flax seed, honey and brown sugar.
4. Stir in nuts and coconut.
5. Press into prepared pan.
6. Bake for 20 minutes.
7. Cool for 10 minutes. Cut into 24 bars. Keep in pan until they
have completely cooled.
Yield 24 bars
