Fourth Street has a taste of southern Italy

That’s one of two mottos
Carlo Falcone likes to live by.
The other is “Life is like wine
— it gets better as it ages.”
“I think it’s a great motto,”
Falcone said in voice as rich
and Sicilian as his homemade
sauces.
Recent Burlington transplants, Falcone and his wife,
Cheryl, are the artistic geniuses behind the new downtown
sensation and Fourth Street
Italian-style
trattoria
LaTavola.
The restaurant has seen
tremendous success since
opening in December. Its dinner reservation book was filled
for the Valentine’s Day weekend a month before the holiday, Falcone said.
A reserved man with an easy
smile, Falcone discussed his
past and the success he has experienced in Burlington while
sipping freshly brewed espresso from a small porcelain cup.
Falcone based his menu on
the influences of his youth,
Mediterranean cuisine —
specifically, southern Italy
where hearty folks eat seafood
and spicy sauces made with
fresh herbs, tomatoes and other ingredients.
The youngest of six children,
Falcone was born in Vizzini, a
small Sicilian town of about
10,000 people, he said.
Falcone first experienced
cooking watching his mother
and sisters prepare meals for
the large Catholic family. His
father worked construction.
His cooking skills were
honed while touring with the
Italian army at age 19. While
the army generally isn’t known
for its appreciation of fine cuisine, Falcone said his patrons
were a little pickier than the
average foot solder.
“We weren’t cooking for the
troops. We were cooking for the
captain, the colonel, the big
guys,” Falcone said.
