The Luck of the Irish
What luck! These St. Patrick's Day favorites have returned. From our
highly sought-after, traditional Irish Soda Bread and vast selection
of Irish stouts and cheeses to our mouth-watering DLM Corned Beef

Fresh-Baked Irish Soda Bread
This seasonal treat is a must-have. Even though the
Irish are thought to have invented baking with soda
and soft wheat, it's actually the American Indians
who are first credited with the technique. They used
pearl ash (or potash), a natural soda in wood ashes, to
leaven bread made with soft wheat—the only type of
wheat that will grow in Ireland. Traditionally, a cross is
pressed into the top of the bread, which was thought
to “let the devil out” resulting in good luck. We bake
our soft, flaky, biscuit-like Irish Soda Bread every day
using fresh buttermilk, baking soda, and currants,
resulting in a salty and sweet marriage.

our house-cured corned beef brisket for more than

Raise a Glass with Irish Stouts
Stout has become synonymous with Ireland and is indeed a symbol of national pride. Irish stout is dry and
intense with a slightly roasted characteristic, and is
quite smooth despite its motor oil resemblance! These
wonderful beers can be enjoyed chilled, yet they are
considered at their best served at room temperature.
We think that they are a “wee” bit of heaven served
with the Irish tradition of oysters! True Irish Stouts:
Smithwick’s Premium Irish Ale, Guinness Extra Stout,
Guinness Draught, and Harp Irish Lager. While the
already mentioned beers are the traditional Irishmade stouts, there are many selections available in
the same spirit from other parts of the world that are
perfect paired with your St. Patrick’s Day dinner. Non
Irish-Made Stouts: Great Lakes Brewing Company Conway’s Irish Ale, Innis & Gunn Irish Whiskey Aged Stout,
and Boulevard Brewing Co. Irish Ale.
The Irish are not only known for their stouts, but for
their cheese, too. And they're not shy when it comes
to adding a bit of beer or whiskey to it for a distinct
flavor. Cahill’s is a family-owned, small-scale cheesemaking dairy in Newcastle West in County Limerick,
Ireland. Their Porter Cheddar is actually flavored with
Irish Porter. Smooth and rich in flavor, the Porter is
distinct without overwhelming the cheese. Cahill's
Whiskey Cheddar is handmade using Kilbeggan Irish
Whiskey and then is matured. It has a light golden tint
and is softer than one might expect from a Cheddar.
The Oscar Wilde Irish Cheddar is aged two years and is
made in County Cork, Ireland. It's a rich cheese with a
firm, creamy taste.

From the shore To our door
E
veryone says their seafood is "fresh" to
the point that the word has almost lost its
meaning. Our definition of the word is one
we stand behind and is one of the building blocks that
has elevated our Seafood department over the years.
It comes down to "time spent out of water,"
says Jack Gridley, DLM VP of Meat & Seafood, and
there are several ways that we keep that time to a
minimum. "Buy it direct," Jack says. At DLM, we go
straight to the fishing co-ops that practice sustainable techniques to ensure wild fish for years to come
and fishing farms that are raising seafood the right
way. "By doing so, it takes days off the travel time and
fish is delivered to our stores faster. No warehouses,
no distributor." It's not uncommon for Jack to visit
with these fishing families, like when he went out on
the water with the fishing co-ops in Alaska or pulled
in lobster traps with Curt Brown of Ready Seafood in
Portland, Maine.
The time spent out of water also is reduced by
choosing to air freight our fish often instead of having it travel by truck. "It's quicker and it costs more,
but it results in drastically less time out of water,"
Jack says. And that's a difference that we believe you
can taste.
You'll also notice a constant stream of new fish in
our seafood case, a true reflection of what's in season. This is the product of constant communication
and good working relationships that our fishmongers
have with our fish providers. On any given day, our
Seafood Managers, like Kim Swing at DLM Washington Square, have likely been on the phone with
several different providers to see what's biting. "I talk
to Carl, our contact in Alaska, more than I do my own
mother. We talk almost every day about what he's
got," Kim says.
As the Lenten season begins, check with us often
as we'll be featuring a vast selection of seasonal
catches as they are available. In addition to a variety
of shellfish—oysters, mussels (don't miss Mussel
Madness, page 9), and wild-caught shrimp—we're
looking forward to an abundance of Alaskan cod and
halibut, as well as Atlantic and organic farm-raised

Donna Frazer, Oakwood Deli Manager
Supportive. Humble. Amazing. Those are just a few words co-workers use to describe Donna Frazer, who is coming up on 30 years at
Dorothy Lane Market Oakwood. "This is home," says Donna. "I just
love the people. I love the food. I love the customers."
Her organization, keen attention to detail, and devotion to customers make a big impact. "She's always doing everything she can to
make sure it's right," says Jerry Post, DLM Oakwood Store Director.
For Donna, who starts her day bright and early setting up deliveries
to get Box Lunches and Deli tray orders to where they need to go, she
likes to think it's just all a part of being the best she can be each day.
Favorite memory: Going to Italy in 2001 with 10 DLM co-workers. "I
loved visiting other stores and actually traveling to one of our prosciutto providers at the time and learning how the meat is cured," she says.
What do you want people to know about the DLM Deli: "I want you
to know how important it is to us that everything is fresh."

Solve the dinner dilemma by cooking up some
seafood. The best part? It's easier to prepare
than you may think. Really! Don't believe me?
Compared to cooking chicken or beef, you
can visually see how the heat affects the fish as
it quickly cooks through. A good rule of thumb is
to figure about 10 minutes of cooking time per
1-inch of thickness. Fish is very method friendly
as it loves the broiler, oven, grill, or the cook top. It
doesn’t have to be difficult. Overall, I like to keep
things simple so that the fresh fish flavor really
comes through, and these products are easy
ways to dress your fish without overdoing it.
If you are a beginner, try using your broiler
to cook the fish; no flipping or turning needs to
happen and it’s delicious with a little sea salt,
like Maldon Sea Salt Flakes or Fleur de Sel, and
a squeeze of fresh lemon. Or, complement a
piece of Arctic char or salmon with Spence &
Co. LTD. Mustard Dill Sauce right before you
remove from the heat. Another fast fish dinner
can happen in your sauté pan with a little Vera
Jane's Extra-Virgin Olive Oil and a good stir-fry
or simmer sauce.
Recreate your favorite fish fry right in your
home kitchen with some of our seasoned mixes
and batters. Try battering up a piece of cod or
tilapia and frying in grapeseed oil.
There's also something amazingly simple
about shrimp cocktail. If you are a horseradish fan, try Indianapolis’ favorite cocktail sauce
from St. Elmo Steak House with ice cold shrimp.

is the ratio of the circumference of a circle to its diameter,
which is approximately 3.14159, although Pi extends over
one trillion digits beyond its decimal point. It’s the 3.14
though that has led us to what is known as Pi Day during
the calendar year—March 14 (3/14), appropriately. “Pi is a
constant number, meaning that for all circles of any size,
Pi will be the same,” according to www.PiDay.org.
