berry-rhubarb sorbet - 5 Corners Farmers Market

“Chew, Chew!!” The weekly recipe of the 5CFM BERRY-­RHUBARB SORBET PUREE INGREDIENTS: 3 stalks of Rhubarb, trimmed and sliced-­‐ Boutin FF, Parker FF, Home Farm,______________________ 1 cup Strawberry or other Berry Jam-­‐ Boutin FF, __________________________________________ ¼ cup water SORBET INGREDIENTS: ¾ cup sugar, 2 cups water, Juice of a lemon, 1 ¼ cup of puree METHOD: For the puree, combine the ingredients and bring to a boil in a large saucepan. Stir occasionally for 10+ minutes until the rhubarb is broken down, and liquid is thick. For the sorbet, in a small saucepan bring to a boil the sugar and water. Once the sugar dissolves remove the pan from the heat. Place the puree, lemon juice and water/sugar mixture in a blender, food processor, or the like (an old fashioned egg beater does the trick too!) Blend until smooth. Place mixture in a 13x9x2 or similar pan in the freezer. Stir the mixture every 30 minutes with a fork, until the sorbet is solid, and well mixed.
