Greek Salad with Homemade Dressing

INGREDIENTS
DRESSING

1/3 cup red wine vinegar

2/3 cup extra virgin olive oil

Wedge of lemon, juiced

1 tbs slightly heaped oregano

1 tsp slightly heaped Italian
style granulated garlic powder

Lettuce
Tomato
Cucumber
Red or white onion
Feta cheese
Greek Olives
SALAD






DIRECTIONS
For the Dressing

Add all ingredients together into a dressing
container and shake well.

Let the mixture sit for 1/2 hour before serving.

Shake well before serving.
For the Salad

Chop all ingredients and
toss together in a salad
bowl.

Sprinkle top with dressing
and mix to desired taste.

months.
When chopped or minced
garlic is added to an olive
oil dressing, it can be
stored in the refrigerator
for one week.
If you do not have a
container specifically for
dressing, use a jam sized
mason jar!

The magic ratio of oil to vinegar is 3 to 1.
Fresh herbs are nice if you have them and often brighter
flavored than dried. Generally you will need about 3 times as
much fresh as dried
Traditionally, vinaigrette is made by putting together the
vinegar and flavorings, then whisking in the oil in a slow,
steady stream to combine it with the vinegar. However you
can also, put all the ingredients in a jar with a lid and shake it.
You can also use a blender or food processor.
Adding a touch of herbs or a small amount of dry or prepared
mustard helps keep the oil and vinegar from
separating.
If your dressing has an intense vinegar
flavor, add a squeeze of lemon, lime juice or
a spoon of apple cider vinegar.
