food AT H O M E R E C I P E SUMMER CITRUS caramelized pineapple sorbet RBISPA.COM CA R A M EL I ZE D P IN E A P P L E SORBET procedure STEP 1 Peel and cut pineapple into small pieces. Toss with 1/4 cup sugar. Compliments of Executive Pastry Chef, Margaret Nolan Carvallo ingredients 1 pineapple 1/4 cup sugar 2 tbsps lemon juice 1 cup coconut water 2 cups raw sugar fresh mint & young coconut (for garnish) LIVE WELL. A squeeze of lemon juice can help strengthen your immune system and improve digestion. STEP 2 Place pineapple pieces in a sauté pan and cook until pineapple begins to caramelize with a golden brown color. STEP 3 Remove pineapple from pan and allow to cool to room temperature. STEP 4 Place the now cooled pineapple, lemon juice, raw sugar and coconut water in a food processor. Blend until everything is fully incorporated and smooth. STEP 5 Place the mixture into a stainless steel bowl and freeze for two hours or until center is slushy. STEP 6 Mix with a spatula and continue to freeze for two more hours or until sorbet is set. STEP 7 Garnish with fresh mint and young coconut. Enjoy!
