dinner or when making a quick snack. We wrote this special salsa recipe book to include
ways to use our award winning salsas as a food enhancer and a way to some “salsa
spice” to your favorite dishes. In most cases, simply add our salsa to your favorite
recipe and your done.

Red Raspberry Salsa
Red Raspberry Meat Loaf
– Just before you place the meat loaf into the oven take
a spoon and create a trench down the top of the loaf.
Simply spoon in several tablespoons of salsa and bake.
I have to say your red raspberry

As the meatloaf bakes, the salsa spices will work its way
through the middle of the loaf. This will create a tasty red raspberry center throughout
the entire loaf.
Grilled Red Raspberry Salmon
– Lightly brush on some red raspberry salsa a few minutes before removing from the
grill. This will provide a slight red raspberry taste to your salmon. Be careful not to add
to much salsa, as it may overbear the salmon.
Pork Loin
- Lightly brush on red raspberry salsa a few minutes before removing the pork from the
oven or grill.
Red Raspberry Breakfast Burrito
– Add a few teaspoons of red raspberry salsa to your breakfast burrito.
This tastes very good if your breakfast burrito also has some breakfast

Red Raspberry Bratwurst
– Spoon on a few tablespoon of salsa onto your bratwurst. Make sure to remove some
of the juice from the salsa so it will not dampen the bun
Red Raspberry Hamburgers
– add a ½ cup of red raspberry salsa to a pound of hamburger and make hamburger
patties. After you make your hamburger, sprinkle some blueberry on top and enjoy your
red raspberry burger.
Peach Salsa
Peach Baked Chicken
– Lightly brush on some peach salsa a few minutes before removing from the oven.
Foiled Wrapped Peach Chicken
– Add ¼ cup of peach salsa to chicken breast wrapped in foil. Bake or grill until done.
Crockpot Peach Chicken
– Add ½ jar of peach salsa, add chicken and cook until done.
Cottage Cheese
– Add some peach salsa to cottage cheese to taste for a quick and spicy snack.

Pineapple Salsa
Pineapple Rice
– Add a spoonful of pineapple salsa to rice, mix
together and enjoy a tasty side dish.
Pineapple Pork
– Add a pineapple slice to the top a pork chop,
spoon pineapple salsa into the center of the pineapple slice and cook. The spices from
the salsa will add some spice the pork chop.
Pineapple Salad Dressing
– Skip the high calorie salad dressing and add pineapple salsa. Add some baked or
grilled chicken for added flavor.
Dip for Coconut Shrimp
– Dip coconut shrimp into pineapple salsa

– Replace the refried beans you would normally use in a burrito with several spoonfuls
of black bean salsa. Heat and enjoy.

How to Measure the Heat of a Pepper
Back in 1912, Wilbur Scoville, a pharmacist by
trade developed a technique for measuring
(rating) a pepper's bite. His method is still used
to this day by sauce producers, salsa
manufacturer and spice companies.
The Scoville method measures the pungency of
all know peppers. The pungency would range
from 0 Scoville units for a bell pepper, while a
Mexican habanero rates at 350,000 units.
The Scoville's method is a simple measurement.
Mr. Scoville would soak each different variety of
pepper in alcohol overnight and because
capsaicin is soluble in alcohol, this simple method
of soaking would extract the pungent chemicals
from the pod.
Once this is completed, the next step is to measure the extract and added to sweetened
water until the presence of pungency was barely detectable on his tongue.
For example, Japan chiles, it took 20,000 to 30,000 sweetened water units before the
pungency was barely discernable. Thus Japan chiles rating between 20,000 to 30,000
Scoville Heat Units.


The Origin of Barbecue
"The origins of both the activity of barbecue cooking and the word itself are somewhat
obscure. Most etymologists believe that barbecue derives ultimately from the word
barbacoa found in the language of the Taíno people of the Caribbean. The word
translates as "sacred fire pit."[2] The word describes a grill for cooking meat, consisting
of a wooden platform resting on sticks.
Traditional barbacoa involves digging a hole in the ground and placing some meat
(usually a whole goat) with a pot underneath it, so that the juices can make a hearty
broth. It is then covered with maguey leaves and coal and set alight. The cooking
process takes a few hours.
There is ample evidence that both the word and cooking technique migrated out of the
Caribbean and into other languages and cultures, with the word moving from Caribbean
dialects into Spanish, then French and English. The Oxford English Dictionary cites the
first recorded use of the word in the English language in 1697 by the British buccaneer
William Dampier. [3]
While the standard modern English spelling of the word is barbecue, local variations like
barbeque and truncations such as bar-b-q or bbq may also be found.[4] In the
southeastern United States, the word barbecue is used predominantly as a noun
referring to roast pork, while in the southwestern states, cuts of beef are often cooked.
The word barbecue has attracted several inaccurate origins from folk etymology. An
often-repeated claim is that the word is derived from the French language. The story
goes that French visitors to the Caribbean saw a pig being cooked whole and described
the method as barbe à queue, meaning "from beard to tail". The French word for
barbecue is also barbecue, and the "beard to tail" explanation is regarded as false by

most language experts. The only merit is that it relies on the similar sound of the
words, a feature common in folk-etymology explanations.[5] Another claim states that
the word BBQ came from the time when roadhouses and beer joints with pool tables
advertised "Bar, Beer and Cues". According to this tale, the phrase was shortened over
time to BBCue, then BBQ.[6]"
