Prep: Spread small tortilla with about 1 tbsp (15 mL) each of peanut butter and jam. Place a banana at the end of tortilla and roll.
Blueberry Jam

Prep: Spread toasted whole grain bagel with light cream cheese and spread with jam. Serve with juice.
Apricot Jam

Oatmeal Crêpes with Strawberries & Ricotta
Orange, Berry & Oat Breakfast Muffins
Prep. Time: 15 minutes | Cook Time: 25 minutes | Makes: 12 crêpes
Crêpes:
1 cup (250 mL)
¼ cup (50 mL)

Crêpes: Combine all ingredients for crêpes, except melted butter, in a
blender. Process at high speed until smooth. Let batter stand for 10-15
minutes. Add melted butter and resume blending until smooth.
Heat a crêpe pan or 8" (20 cm) non-stick skillet over medium-high
heat. Grease pan with butter. Pour in 2 tbsp (30 mL) of the crêpe batter,
swirling batter around the pan to coat the bottom. Cook crêpe until
golden brown. Flip crêpe and cook until golden spots appear, about 15
seconds. Transfer crêpe to parchment-lined oven-proof plate. Repeat
with remaining batter, placing a sheet of paper towel between crêpes.
Cover tightly with foil and keep warm in 350°F (180°C) oven.
Filling: Combine ricotta cheese and jam in small bowl. Microwave for
15-20 seconds; reserve.
Sauce: Combine jam and orange juice in large measuring cup.
Microwave for 20 seconds to heat; stir well.

Assembly: Place crêpes on work surface. Spread 2 tbsp (30 mL) of
filling down centre of each crêpe; roll up. Repeat with remaining crêpes.
Place 2 crêpes on each plate and drizzle with warm sauce. Top with
strawberries and icing sugar, if desired.
MAKE AHEAD TIP: Make crêpes 1 day ahead, wrap well and refrigerate or
freeze and keep for up to 1 month. Thaw crêpes in refrigerator. To reheat,
cover with foil and heat in 350°F (180°C) oven for 15 minutes. Then
continue with recipe from Filling directions.

Preheat oven to 350°F (180°C). Grease or line a 12-cup
muffin tray with paper liners.
In a large bowl, combine first 7 ingredients. In a smaller
bowl, whisk together orange juice, liquid eggs and oil; pour
over dry ingredients. Stir together just until moistened.
Spoon half of the batter evenly into muffin cups (about ⅓
full). Drop 1 tsp (5 mL) of jam in centre of batter in each
muffin cup. Top evenly with remaining batter and place a
final ½ tsp (2 mL) of jam on top of each muffin. Using a
knife, drag tip from centre outwards in a circular motion to
create a marbled effect.
Bake for 20 minutes or until tops are firm to the touch.
Remove from oven and cool for 10 minutes before removing
from tray.

Combine all ingredients in blender and process on high
speed until smooth.
TIP: If you like a sweeter smoothie, add a little more
jam to taste.
Smoothies add zing to your breakfast when made with
natural ingredients like 100% fruit juice. Tasty goodness
in a glass!
Blueberry French Toast
Oatmeal, Nut and Berry Breakfast Bars
Prep. Time: 7 minutes | Bake Time: 6 minutes | Makes: 4-6 servings

In a wide shallow dish, whisk together liquid eggs, vanilla,
and cinnamon.
Spread 2 tbsp (30 mL) jam on 4 slices of bread; top with
remaining bread. Dip both sides of bread into egg mixture
until all liquid is absorbed.
Spray a non-stick skillet with cooking spray. Heat over
low-medium heat and cook bread for 2-3 minutes per side
or until golden brown.
If desired, serve with a dusting of icing sugar or blueberry
sauce on top.
Blueberry Sauce: Combine ⅓ cup (50 mL) Smucker’s®
Pure Blueberry Jam and 1 tbsp (15 mL) lemon juice in a
small bowl. Microwave on high for about 15 seconds to
warm mixture; stir well. Drizzle sauce over French toast.
MAKE-AHEAD TIP: Prepare French toast as directed above, up until bread is dipped in egg mixture, then place on a baking
sheet sprayed with non-stick cooking spray. Cover and refrigerate overnight. The next morning, bake uncovered in a preheated
350°F (180°C) oven for 20-22 minutes or until golden brown, turning bread over after about 15 minutes. If using Blueberry
Sauce, prepare the night before, refrigerate covered and warm in microwave for 15-20 seconds before using; stir well.

Preheat oven to 350°F (180°C). Grease a 9" x 9"
(22 cm x 22 cm) baking pan with non-stick cooking spray.
In a large bowl, cream butter with sugar until light. Whisk
in eggs and vanilla. In a medium bowl whisk together, flour,
oats, flax, baking soda, salt and cinnamon. Pour into wet
ingredients and stir until combined.
Spread ⅔ of the batter evenly into pan and spread with jam.
Add almonds to remaining batter and drop evenly over jam
to create a cobbled effect (there will still be a lot of jam
showing). Bake 30 minutes or until golden and surface
is firm to the touch. Remove from oven and cool in pan
completely. Cut into bars.
Orange & Wildberry Oatmeal
Prep Time: 2 minutes | Cook Time: 5 minutes | Makes: 4 servings
2 cups (500 mL)

Bring water & juice to a boil in a saucepan; stir in oats.
Return to a boil, reduce heat and simmer. Cook uncovered
for 3 minutes stirring occasionally, remove from heat. Stir in
jam. Let stand for 2 minutes covered.
Divide oatmeal evenly into 4 bowls and serve with yogurt.
If desired drizzle with jam and nuts.
