Coat a 7x11
inch baking dish
with nonstick
cooking spray.
Cut up carrots and onion to have ready for the
steamed carrot side and the simple rice pilaf.
In a small sauce pan, whisk together 2 Tbs. hollandaise sauce
mix and 1/2 cup of milk. Add 2 Tbs. butter and bring to a
boil, stir frequently. Reduce heat and keep warm on low
heat. Sauce will thicken after about 1 minute.

Place 1 cheese slice
and 1 ham slice on
top of each breast.
Roll up each breast,
and secure with a
toothpick. Place in
baking dish, and
sprinkle chicken
evenly with bread
crumbs.
Bake for 25 to 30 minutes, or until chicken is no longer pink.

Preheat oven to
350 degrees F.
Pound chicken breasts to 1/4 inch thickness. Sprinkle both
sides of chicken breasts with salt and pepper.

As soon as you get the chicken in the oven start the rice.
Melt 1 Tbs. butter in a lidded skillet over medium-low heat.
Cook and stir 1/4 cup orzo pasta, onion and 3/4 teaspoon
freeze dried minced garlic until orzo is golden brown.

Now mix in the 1/4 cup of rice, chicken broth and 1/8 cup
water. Increase heat to high and bring to a boil. Reduce heat
to medium-low, cover, and simmer until the rice is tender,
and the liquid has been absorbed, 20 to 25 minutes.

Put sliced carrots into a separate pan,
cover them with water and salt to taste. Heat to boiling on
high, once boiling reduce heat to medium-low, cover,
and simmer until carrots are tender.

Remove chicken from oven, and place 1/2 cheese slice on
top of each breast. Return to oven for 3 to 5 minutes, or
until cheese has melted. Remove toothpicks, and serve.
Remove rice pilaf from heat and let stand for 5 minutes,
then fluff with a fork. Plate all of meal.
Serve and enjoy your Delicious Family Dinner.
