Acidification is applied in most non-alcoholic beverages
for pH regulation and for flavor purposes. The choice of
acidulant – or combination of acidulants – can inevitably
impact the overall quality of the final product. Corbion Purac
offers natural innovative solutions which enable producers to
control acidification and stabilize natural colors in beverages.
Extending shelf life
PURAC® FIT Plus, the multi-purpose acidulant developed by
Corbion Purac, enables producers to stabilize natural colors
(anthocyanins) in beverages and to control Alicyclobacillus in
juice-based beverages. PURAC FIT Plus is a natural and pure
grade of lactic acid, specifically designed for taste sensitive
applications such as beverages and is increasingly being used
in the beverage industry as multi-purpose acidulant.
Color
Natural colors such as anthocyanins (natural red-purple) are
commonly acknowledged as unstable by nature and can
consequently provide reduction of color intensity or color
change ( browning) in beverages. Depending on various
factors such as pH, temperature and light, anthocyanin
stability in acidified beverages can be increased by up to 50%
by replacing citric acid with PURAC FIT Plus.

Challenges when creating low calorie beverages include
off flavors or unpleasant, bitter aftertastes. Our product,
PURAC® FIT Plus, successfully masks off flavors of intensive
sweeteners, such as Aspartame and Stevia. PURAC FIT Plus
also brings a new flavor experience and a potential cost
saving - the addition level of flavors and artificial sweeteners
can be reduced up to 15%. In addition, it provides a mild, sour
flavor, improves shelf life and decreases precipitation scaling,
when compared to other acidifiers. PURAC FIT Plus is the

Control of Alicyclobacillus spores
Alicyclobacillus is a spore forming bacteria which
spoils juice-based beverages. Though spoilage is not
a safety concern, it is a serious economic issue for
the juice industry. PURAC FIT Plus enables producers
to inhibit growth of Alicyclobacillus’ vegetative cells
and to avoids Alicyclobacillus’ spores to germinate.
Furthermore it can be applied as extra hurdle in
controlling yeast and mold.
