Mexican Casserole
Ingredients:
• 1 pound ground beef (cooked and drained)
• 1 medium onion (chopped)
• 1 small green pepper (chopped)
• 16 oz. can kidney beans (drained and rinsed)
• 14.5 oz. can diced tomatoes
• 8 oz. tomato sauce
• 1/4 c. water
• 1 pkg taco seasoning
• 1 Tb chili powder
• 1 1/3 c. uncooked instant rice (or 3 c. cooked rice)
• 1 c. cheddar cheese
Directions
1. Mix all ingredients (except instant rice and cheese) in Slow Cooker.
2. Cook on low for 4-6 hours or on high for 2-3 hours.
3. Add the instant rice if you are using about an hour before you are ready to eat.
4. Top with cheese a few minutes before serving.

Freezer to Slow Cooker Instructions:
• Place all ingredients (except instant rice and cheese) into a gallon size freezer bag.
• Put cheese in different freezer bag and staple onto casserole bag along with bag of rice
(if using)
• Label each bag and freeze as flat as possible
• Thaw in fridge the night before cooking
• Follow cooking instructions above.

Beef Stroganoff
Ingredients:
• 2 pounds of cubed beef stew meat OR 4 cups of cooked ground beef
• 4-10.5 oz. cans of cream of mushroom soup (recommend golden mushroom soup if
your store carries it)
• 1 cup chopped onion
• 2 Tb. Worcestershire sauce
• 1/2 c water
• 1 c. sour cream
• 2 Tb. minced garlic
• 1 packet of onion soup mix
• Chopped mushrooms (optional)
• Egg noodles- to serve with meat mixture (prepare according to package instructions)
Directions
1. Mix all ingredients except egg noodles in Slow Cooker.
2. Cook on Low for 6-8 hours or if meat is precooked, 3-6 hours.
3. Serve over egg noodles.

Freezer to Slow Cooker Instructions:
Option 1:
• Mix all ingredients in freezer safe bag except egg noodles. Freeze as flat as you can.
• Remove and defrost the night before if possible.
• Put in crockpot on low for about 6-8 hours or if meat is precooked, 3-6 hours.
• Serve over egg noodles.
Option 2: (this is a freezer space saver)
• Put 4 cans of mushroom soup and egg noodles in paper bag. Staple and label “Beef
Stroganoff” so that these ingredients will be saved for cooking day.
• In a freezer safe bag, put meat, onion, onion soup mix, Worcestershire sauce, water,
sour cream, garlic and optional mushrooms. Mix together, lay flat and freeze.
• Remove and defrost night before if possible.
• On cooking day, put in crockpot on low for 6-8 hours or if using pre cooked ground
beef, low for 3-6 hours.
• Serve over cooked egg noodles.
NOTE: 1 pound of ground beef equals 2 cups.

Slow Cooker Pizza
Ingredients:
• 1.5 pounds ground beef
• 1 medium onion
• 1 green pepper
• 3 oz. pepperoni
• 32 oz. spaghetti sauce
• Box of rigatoni
• 10 oz. mozzarella cheese shredded
• 10 oz. cheddar cheese shredded
Directions
1. Brown ground beef and drain
2. Boil Noodles-drain
3. While ground beef is cooking, chop onion and green pepper
4. Layer 1/2 meat, 1/2 pasta and 1/2 cheese.
5. Repeat layers.
6. Cook on low for 4 hours.

Freezer to Slow Cooker Instructions:
• Mix together meat, onion, green pepper and sauce.
• Separate it into 2 quart size freezer bags.
• Mix together Mozzarella and Cheddar Cheese into freezer safe bag.
• Staple bags together.
• Label each bag with which recipe they’re for & lay flat to freeze.
• It is important that the bags are thawed out the morning you are ready to assemble
this recipe, so that you can appropriately layer it.
• Follow cooking instructions above when ready to cook.

Taco Soup
Ingredients:
• 1 pound ground beef- cooked and drained
• 1 onion (chopped)
• 2 15 oz. cans chili beans
• 1 15 oz. can corn
• 1 15 oz. can tomato sauce
• 1 10 oz. can Rotel
• 1/2 can water
• 2 Tb taco seasoning
• Sour cream, corn chips, shredded cheddar cheese (for optional toppings)
Directions
1. Mix all ingredients in slow cooker.
2. Cook on high for 4 hours or on low for 8 hours.
3. Serve with or without optional toppings.
Freezer to Slow Cooker Instructions:
• Mix all ingredients in freezer safe bag and lay flat to freeze.
• Thaw in fridge overnight before cooking if possible.
• Cook as directed above

Tater Tot Casserole
Ingredients:
• 32 oz. bag tater tots
• 1 lb. ground beef, browned and drained
• 1/2 tsp salt
• 1/4 tsp pepper
• 2 15 oz. cans green beans
• 1 10.5 oz. can cream of mushroom soup
• 1/2 chopped onion
• 1/4 c. milk
• Cheese (optional for sprinkling over after cooked)
Directions
1. Line slow cooker with tater tots.
2. Mix remaining ingredients in a bowl (except the cheese).
3. Cover the tater tots with mixture.
4. Cook on low for 6 hours or on high for 3 hours.
5. Sprinkle each serving with cheese if desired.
Freezer to Slow Cooker Instructions:
• Freeze all but tater tots & cheese in freezer safe bag.
• Try to thaw the bag in the fridge, the night before cooking so it will spread out over tots
easily.
• Cook as directed above.

Pasta Fagiola
Ingredients:
• 1 pound cooked ground beef drained
• 1/2 large red onion, chopped
• 1 cup carrots, chopped
• 2 celery stalks, sliced
• 2 cans (14.5 oz) diced tomatoes
• 1 15 oz. can kidney beans, drained and rinsed
• 1 15 oz. can white beans, drained and rinsed
• 4 cups beef broth
• 1 jar (16.5 oz) pasta sauce
• 2 tsp oregano
• 1 Tb. Tabasco sauce (we leave out and add to individual bowls)
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/2 cup dry pasta, to add at end of cooking time (I used egg noodles, that’s all I had
and I realized later that I used too many)
Directions
1. Mix all ingredients except pasta 2. Cook on low for 6-8 hours or on high for 3-4crockpot.
3. Add pasta in 1/2 hour before serving.

Freezer to Slow Cooker Instructions:
Option 1 (freezer space saver):
• Mix ground beef, onion, carrots, celery, oregano, tabasco, salt, pepper and beef broth in
freezer bag.
• Freeze with note to add 2 cans of diced tomatoes, 1 can kidney beans, 1 can white
beans (drained & rinsed), pasta & 1 jar of pasta sauce on crockpot day.
Option 2:
• Mix all ingredients except pasta into freezer bag(s). Label and freeze.
• Try to thaw the night before in the fridge and put it directly into the crockpot first
thing in the morning.
• Cook on low for 6-8 hours or on high for 3-4crockpot.
NOTE: You may want to cut the recipe in half. This makes a large amount. Use a 6 quart
or larger slow cooker.

Meat Loaf
Ingredients:
• 2 eggs, beaten
• 1/2 c. milk
• 2/3 c. bread crumbs
• 1/2 chopped onion
• 1 tsp salt
• 1/2 tsp sage
• 1 1/2 lbs ground beef
• Ketchup or BBQ Sauce to cover meat while cooking
Directions
1. Mix and divide into 2 individual loaves.
2. Place side by side into slow cooker.
3. Cover with ketchup or BBQ sauce.
4. Cook on low for 8-10 hours

• Mix in and divide into 2 individual loaves.
• Place in freezer bag and label; freeze as flat as possible

Monterey
Ingredients:
• 2 lbs ground beef cooked and drained
• 1-15 oz. can Chili beans-per pound of beef cooked
• Chili Seasoning- Optional
• Flour tortillas
• Oil- for frying tortillas in
Toppings:
• Lettuce,
• Onions
• Shredded cheese
• Sour cream
• Salsa
• Jalapeno peppers
Directions:
1. Brown beef and drain.
2. Mix in chili beans and chili powder and cook until hot throughout.
3. While meat and bean mixture is cooking, heat oil in pan.
4. Place tortilla in oil, it will bubble up, use a fork to poke holes in it and flatten it back
down.
5. Flip tortilla, making sure it is brown on both sides.
6. Top the tortilla with meat mix and any other toppings you like.

Variations:
1. Make it healthier by omitting fried tortilla and serve over lettuce alone.

Easy Slow Cooker Chili
Ingredients:
• 2 lbs. ground beef cooked and drained
• 1 onion, chopped
• 4 15 oz. cans tomato sauce
• 2 15 oz. cans diced tomatoes (mexican style)
• 4 15 oz. cans pinto beans
• 2 envelopes taco seasoning (we prefer to use 1 envelope of Williams that
flavors 2 pounds)
• 1 tsp. garlic powder
• 1 Tb. chili powder (optional)
Directions:
1. Brown hamburger with onion. Drain
2. Dump hamburger mixture along with all other ingredients into your slow cooker.
3. Cook on low for 6-8 hours or on high for 3-4 hours.
Freezer to Slow Cooker Instructions:
• Mix all ingredients in freezer safe bag and freeze flat.
• Thaw the night before in fridge.
• Put contents of bag in slow cooker, cook for 4 hours on high or 8 hours on low.

Sweet and Sour Meatball
Ingredients:
• 2 pounds, ground beef
• 1 egg
• 1 onion, chopped
• 1 pinch salt
• 1 (12 oz.) bottle chili sauce (found in condiment aisle near ketchup)
• 2 tsp. lemon juice
• 1 cup grape jelly
Directions:
1. In large bowl, combine beef, egg, onion and salt.
2. Mix together and shape into balls.
3. Cook for 10-15 minutes in a skillet so that you can get some grease out of them. They
can finish cooking in the slow cooker.
4. In crockpot, combine chili sauce, lemon juice and grape jelly.
5. Stir in meatballs and cook on high for 4 to 5 hours or on low for 6-8 hours.
Freezer to Slow Cooker Instructions:
• In large bowl, combine beef, egg, onion and salt.
• Mix together and shape into balls. Place in freezer bag and label.
• Combine chili sauce, lemon juice and grape jelly. Place in separate freezer bag and
staple to other bag.
• Follow instructions 3-5. Thaw the sauce bag before mixing.

Sloppy Joes
Ingredients:
• 2 pounds ground beef
• 1 large onion, chopped
• 2 garlic cloves
• 1 8 oz can tomato sauce
• 1 6 oz can tomato paste
• 1/2 cup ketchup
• 1/3 cup packed brown sugar
• 3 T. soy sauce
• 12 hamburger buns
Directions:
1. Brown ground beef with onions and garlic cloves
2. Dump tomato sauce, tomato paste, ketchup, brown sugar and soy sauce into slow
cooker. Mix it up.
3. Pour meat mixture in and mix it well.
4. Turn on low and cook 2-4 hours.
NOTE: You may even want to butter the buns and toast them in the oven.
Freezer to Slow Cooker Instructions:
• Brown ground beef with onions and garlic cloves
• Mix tomato sauce, tomato paste, ketchup, brown sugar and soy sauce then place in
freezer bag and label. Freeze flat.
• Thaw night before. Cook as above.

Beef Shepherds Pie
Ingredients:
• 2 pounds ground beef (browned)
• 1 medium onion (chopped
• 1 clove garlic (chopped)
• 1 can diced tomatoes
• 1 bag frozen peas
• 1 cup chopped carrots
• 2 tsp. oregano
• 1 tsp. salt
• 1/2 tsp. pepper
• Instant Mashed Potatoes (Enough for your family, I usually make 8-12 servings)
Directions:
1. Mix all ingredients together except mashed potatoes.
2. Cook on low for 7 to 8 hours.
3. Mix up mashed potatoes, the day you plan to serve the meal.
4. Put on top of the meat & veggie mixture and cook for 30 minutes, giving the mashed
potatoes a chance to heat all the way through.
NOTE: We topped ours with cheese….but that is totally optional!

• Mix all ingredients together except mashed potatoes.
• Place in freezer safe bag, label, lay flat and freeze.

Crockpot Lasagna
Ingredients:
• 2 pounds sausage or ground beef (browned)
• 2 cans (26.5 oz each) Spaghetti sauce
• 1 Box Lasagna Noodles (cooked)
• Shredded Cheddar Cheese (use as much or as little as you like)
• 2 cups cottage cheese
• 1/2 cup Parmesan cheese
• 1 Egg
Directions:
1. Brown sausage. Mix with spaghetti sauce
2. Cook lasagna noodles. While noodles are cooking, mix 2 cups cottage cheese, one egg
and 1/2 cup of Parmesan cheese.
3. In the bottom of slow cooker, put a small amount of sauce on the bottom. Then layer
noodles, sauce mixture, cottage cheese mixture and cheese. Repeat 2-3 times (until
you run out).
4. Cook on low 4-6 hours.
Freezer to Slow Cooker Instructions:
• Prep: Brown sausage. Mix with spaghetti sauce. Put mixture in freezer safe bag and
label.
• Night Before: Remove Meat Mixture from freezer so it will be thawed by morning (or
you can microwave it a bit if you need to.
• On cooking day: Cook lasagna noodles. While noodles are cooking, mix 2 cups cottage
cheese, one egg and 1/2 cup of Parmesan cheese.
• Follow steps 3 and 4 above.

Slow Cooker Vegetable Beef Soup
Ingredients:
• 2 pounds ground beef , cooked with onion and drained
• 1/2 medium onion, diced.
• 1 16 oz. bag of frozen mixed vegetables
• 1 15 oz. can white beans, drained
• 2 cups of frozen corn (or 1 can)
• 2 cups carrots, sliced
• 5 cans of diced tomatoes & green chilies
• 2 cups of water
Directions:
1. Chop Onion
2. Cook ground beef and onions.
3. While beef is cooking, chop carrots
4. Place all ingredients in Slow Cooker. Cook on low for 6-8 hours or high for 3-4 hours.
Freezer to Slow Cooker Instructions:
• Place 1st 6 ingredients in a freezer safe bag. Staple note to the bag that says, “Add 2
cups of water & 5 cans of diced tomatoes & green chilies”.
• Thaw in fridge the night before. To put in slow cooker in morning.
• Follow instructions above.

Easy Crockpot Meatballs
Ingredients:
• 1.5 pounds ground beef (low fat content if you plan to cook with sauce)
• 1.25 cups Italian bread crumbs
• 2 cloves garlic, minced
• 1 medium onion, chopped
• 1 egg
• 2 28 oz. jars of spaghetti sauce
• Spaghetti Noodles (for cooking before you serve)
Directions:
1. Mix first 5 ingredients together. Shape into 16 meatballs.
2. Cook for 10-15 minutes in a skillet so that you can get some grease out of them. They
can finish cooking in the slow cooker.
3. Put sauce in slow cooker and then place meatballs on top.
4. Cook for 6-8 hours on low.
5. Serve over cooked spaghetti noodles.
Freezer to Slow Cooker Instructions:
• Mix first 5 ingredients together. Shape into 16 meatballs.
Option 1:
• Place them onto a cookie sheet and into the freezer so they don’t stick together when
placed in the bag.

• Once they are frozen, put them into the bag, making sure the bag was labeled. Always
be sure to label your bag with the date and the name of the meal.
Option 2:
• Cook for 10-15 minutes in a skillet so that you can get some grease out of them.
• Then place in freezer bag with label and freeze.
Cook Day:
• Thaw the night before.
• Finish with steps 3-5.

Hearty Western Casserole
Ingredients:
• 1.5 lbs. ground beef, browned and drained
• 16 oz. can of corn, drained
• 16 oz. can kidney beans, drained
• 10.75 oz. can tomato soup
• 1/4 cup milk
• 1 teaspoon minced dry onion flakes
• 1/2 teaspoon chili powder
• 1 cup Cheese (your choice) topping
Directions:
1. Combine all ingredients except cheese.
2. Cover and cook on low for 3-4 hours or high for 1-2 hours.
3. Sprinkle servings with cheese is using.
Freezer to Slow Cooker Instructions:
• Combine all ingredients- except cheese, in a gallon size freezer safe bag.
• Label & Freeze flat.
• Thaw the night before cooking.
• Cook as directed above.

Crock Pot Stuffed Pepper Soup
Ingredients:
• 1-2 lbs. ground beef
• 1 medium onion, chopped
• 2 green peppers, chopped
• 2 15oz cans diced tomatoes, undrained
• 1 15 oz. can of tomato sauce
• 1 15 oz. can of water
• 1 15 oz. can corn (optional)
• 1 cup brown rice (if you choose to use instant or white, add at the end of cooking)
• 1 clove garlic
• 1/2 tsp parsley
• 1/2 tsp oregano
• 2 Tablespoons brown sugar
• 2 tsp salt
• 1 1/2 tsp pepper
Directions:
1. Place all ingredients in slow cooker.
2. Cook on high for 4-5 hours or on low for 7-8 hours.
NOTE: The longer this cooks, the more likely the rice is going to soak up all the liquid. If
you find your soup thick, you can add water to it until it reaches the consistency
you’d like to see.

• Also, if you use white rice, it will be mush. If you plan to cook the rice in the slow
cooker, you’ll need a tougher grain, like brown rice. If you prefer white rice, cook it
separately and add it towards the end of its cooking time.
Freezer to Slow Cooker Instructions:
• Brown Ground Beef
• Chop Onions & Green Peppers
• Place all ingredients except rice in freezer safe bag.
• Label the bag and write a note to be sure to add the rice to the crockpot on the day of
cooking.
• Lay it flat to freeze.
• Thaw the night before cooking.
• Follow instructions above to cook.

Pizza Burgers
Ingredients:
• 2 lbs. ground beef or turkey (browned)
• 1 small onion, chopped
• 24 oz. of tomato sauce (I used 3 8oz cans, because that’s what I had on hand)
• 2 tablespoon dried oregano
• Dash of Salt (optional)
• 1/4 tsp. pepper
• Cheese to top with
• Hamburger Buns
Directions:
1. Cook ground beef in skillet until brown. Drain
2. Place meat in slow cooker.
3. Add remaining ingredients (not cheese or buns) and mix well.
4. Cook on low for 2-3 hours or until onions are tender.
Optional idea: Add green peppers and/or other pizza toppings to the mixture.
Freezer to Slow Cooker Instructions:
• Mix all ingredients except hamburger buns and cheese together in a freezer safe bag.
Label & lay flat to freeze.
• Thaw (if possible) before cooking.
• Cook for 2-3 hours on low.

Cheeseburger Soup Recipe
Servings: 10-12 (made enough for our family of 8 to have at least 2 servings each)
Ingredients:
• 1.5-2 Pounds cooked ground beef, drained
• 1 onion, diced
• 1 Tablespoon of minced garlic
• 2 Cans (14.5 ounce) Diced Tomatoes
• 1 pound bacon, cooked & broken into pieces
• 6-7 small to medium Potatoes, Cubed (or can substitute shredded potatoes/ hash
browns if you want to freeze ahead)
• 1 cup of chopped or shredded carrots
• 8 oz. pkg. of cream cheese Cubed
• 8 cups of Chicken Broth
• 2 teaspoons of Salt
• 1 teaspoon of Pepper
• 2 cups of milk
• 1/2 cup of flour
• 3 cups of cheddar cheese, shredded
Directions:
1. Place cooked ground beef, garlic, diced tomatoes, 1/2 of the cooked bacon, onion, pota
toes, carrots, cream cheese, chicken broth, salt and pepper into the slow cooker.
2. Cook on low for 7 hours.

3. One hour before done cooking, whisk milk and flour together and pour into the slow
cooker.
4. Add the 3 cups of cheese at this time as well.
5. Let cook another hour or so.
6. Top with shredded cheese and bacon pieces.
Freezer to Slow Cooker Instructions:
• Cook bacon & ground beef.
• Crumble the bacon & place half of it in a quart sized freezer bag.
• Chop the carrots & onion.
• Chop the cream cheese into cubes.
• Substitute 6-7 potatoes for 3-4 cups of hashbrowns.
• Add all ingredients except milk, flour and cheese to the gallon size freezer bag.
• Freeze cheese in another freezer bag to make sure you have enough on cooking day.
• Label & Freeze as flat as possible.
• Thaw in fridge the night before cooking. (If you forget, can cook frozen, just add an extra
hour of cooking time to it)
• On cooking day, follow instructions in original recipe.

Hobo Dinner Slow Cooker Packet
Ingredients:
• Ground Beef
• Salt & Pepper
• Onion
• Potatoes

• Worcestershire Sauce (optional)
• Aluminum Foil
Directions:
1. Lay out a large square of foil and place a hamburger patty in the middle of it. Salt &
Pepper it.
2. Place Chopped Onions on top.
3. Place diced potatoes on top of that.
4. Place baby carrots on top of the onions and potatoes. You can put a teaspoon of
Worcestershire on top before you close it up for extra flavor if you wish.
5. Close packet up and stack up into slow cooker.
6. Cook on high for at least 5-6 hours.
7. When they are finished, the potatoes and carrots should be tender
NOTE: We found the ones towards the top didn’t get done as quick as the ones at the
bottom, so you may want to rotate them once during the day..
