Types and percentage of vines that we grow in our vineyard: 50 % Grenache black and white, 35% Syrah, 5% Cinsault, 5% Roussane, 5% Vermentino Wine grown: Wine grown on flat land, in deep clay soil. Composition of the wine: mixing of Grenache and Syrah. Production: 65 hectoliters/hectare Average age of the vines: 35 years. How we make the wine: The grapes are carefully picked, with the 2 types kept separate until after pressing and then soaked in half-burried vats for around 8 days. The grapes are then pressed, and the juice de goutte and the juice from the pressing are fermented together. No need for clarifying. The wines are then filtered through Kieselgur (clay), and then kept in vats with floating lids. These vats are used for filling the Bag in Box wines when it is needed. We guarantee the delivery of recently filled Bag. in Boxes. Tasting: A fruity wine, with a good balance of tannins, for every day drinking, accompanies a wide variety of dishes. and Serving temperature: 18 to 22° Serving: The traditional dishes : a good stew or ragout, etc. Conservation: Our red wines can be kept for 3 months before opening the Bag in Box, and will stay fresh for a further 2 months..
