From delicious meat dishes to vegetables and all the trimmings we’re here to deliver a truly cracking Christmas. 07 08 04 09 10 CONTENTS SEASONAL POTATOES 03 FESTIVE HAMS 05 TASTY TURKEYS 07 PERFECT SIDE DISHES 09 GET CREATIVE WITH 03—04 POTATOES Crunchy Goose or Duck Fat RoasT Potatoes Boil, fluff then crisp up in duck or goose fat for perfect roast potatoes. SERVES 8-10 OVEN 190˚C or Gas 5 give it a try! INGREDIENTS 1.5kg Potatoes 4 Crushed garlic cloves Cracked black pepper Sea salt Sprig of rosemary Jar of duck or goose fat DIRECTIONS 1 Peel and cut potatoes into even sizes. 2 Parboil until nearly tender and outside slightly tearing. 3 If not, scrape potatoes with a fork or rustle in pot with a pinch of salt. 4 Put fat in a non stick tray with garlic and rosemary. 5 Add the potatoes and cracked black pepper. 6 Bake for 35 minutes or until crunchy. Garlic & sage crispy potatoes INGREDIENTS 1kg Potatoes 125ml Olive oil 1 Head garlic cloves Sea salt flakes 20 Sage leaves 4 Place the oil and garlic on a baking tray cook for 5 mins or until hot. DIRECTIONS 1 Preheat oven to 220˚C. 6 Add the sage and cook for 5 mins or until crispy. They’re tasty and cheap so give this household cupboard staple the lead role with garlic and sage. 2 Place potatoes in a saucepan of cold water and cook for about 20 mins or until cooked through. SERVES 8 READY IN 40MINS 3 Drain and roughly crush with back of spoon. 5 Add the potatoes and salt and cook for a further 10 mins. feed the crowd with a 05—06 festive ham coca cola gammon Feed a crowd with a festive gammon joint cooked in Coca Cola and honey drizzle. SERVES 18-20 OVEN 200˚C or Gas 6 INGREDIENTS 1 Horseshoe gammon 1 Onion 2 Ltr Coca Cola 4 Tsp Mustard 4 Tsp Brown Sugar 2 Tsp Runny Honey 2 hours 40mins. Add water if required. DIRECTIONS 1 Soak gammon overnight in cold water. 5 Bon Appetite. 2 Next morning, drain, add cola and boil for honey & mustard glazed ham 3 When cooked, rub mustard & sugar into ham and then drizzle honey. 4 Bake in a hot oven for around 15 minutes. Succulent honey and mustard glazed ham is perfect for a Boxing Day feast. SERVES 18-20 OVEN 180˚C or Gas 4 INGREDIENTS 1 Horseshoe gammon 1 Jar of wholegrain or english mustard 1 Cup of honey 1 Tbsp of cloves DIRECTIONS 1 Soak gammon overnight in cold water. 2 Next morning, change water and boil for 2 hours. 3 Stud gammon with cloves and place in roasting tin. 4 Mix the honey with mustard and glaze the ham. 5 Cook for 30 minutes or until ham caramelises. tip! If you don’t like mustard, mix a jar of marmalade and a tin of chopped pineapple! DON'T FORGET OUR 07—08 TASTY TURKEYS Sage & Black Pepper Turkey Roasting your Christmas turkey with flavoured butter locks in moisture. SERVES 18-20 BACON WRAPPED STUFFED TURKEY BREAST INGREDIENTS 1 Lynas turkey butterfly 120g Butter Small bunch of sage Sea salt 1 Tbsp cracked Black pepper A finishing touch of bacon makes this turkey breast a Christmas dinner centre-stage star. DIRECTIONS 1 Make flavoured butter: Soften butter to room temperature and add the chopped sage, cracked black pepper and a pinch of sea salt then mix. INGREDIENTS 1 Lynas turkey butterfly 1 Cups breadcrumbs Chicken stock 1 Tbsp garlic puree 2 Tsp fresh rosemary 2 Tsp fresh sage 1 Tsp lemon zest Tsp salt Tsp black pepper 12 Streaky bacon rashers 2 Slice turkey butterfly into 2 separate breasts. 3 Gently pull back skin to make a pocket. 4 Rub butter in pocket and close. Season skin and rub. 5 Wrap each breast tightly in cling film and then wrap tightly in tinfoil. 6 Place in deep roasting tin, fill with water until bottom 1/4 of turkey is covered. 7 Roast in oven for 1hour 45mins. PREP 30MINS COOK 85MINS DIRECTIONS 1 Pound the turkey breast to even thickness. 2 Combine the stuffing ingredients in a bowl, the mixture should be moist. Spread stuffing evenly over turkey. 3 Roll the breast lengthwise to create a cylinder, arrange bacon slices on a work surface, then place on turkey and tightly wrap around. 4 Tie with string to uniform turkey and secure bacon. 5 Then place on a roasting tin and and roast in oven at 170˚C/ gas 3 for 1hr 15min/1hr 30min. 6 Bacon should be nice and crispy and turkey moist. 7 Remove string slice and serve. RULE THE ROAST WITH OUR 09—10 PERFECT SIDE DISHES roasted winter vegetables Bring out the sweetness of all these winter vegetables with this new side dish - a great accompaniment with casseroles or your Christmas roast. SERVES 12 CRANBERRY & HERb SAUSAGE MEAT STUFFING homemade is best! SERVES 10-12 COOK 180˚C or Gas mark 4 INGREDIENTS 2 Onions (sliced) 200g Breadcrumbs 200g Frozen cranberries 1 Tbsp mixed herbs 600g Sausage meat Salt & pepper Knob of butter DIRECTIONS 1 Fry the onions and cranberries in butter for 5 mins. 2 Add all the remaining ingredients and season. 3 Roll mixture in tinfoil or put in a cake tin. 4 Bake for 40 mins. 5 Enjoy! INGREDIENTS 1 Small butternut squash 2 Red peppers seeded and diced 1 Sweet potato, peeled and diced 3 Maris piper, cubed 1 Red onion, quartered 1 Tbsp chopped fresh thyme 2 Tbsp chopped fresh rosemary 4 Tbsp olive oil 2 Tbsp balsamic vinegar Salt freshly ground black pepper DIRECTIONS 1 Preheat oven to 240˚C/Gas 9. 2 In a large bowl, combine the butternut squash, red peppers, sweet potato and maris pipers. 3 Separate the red onion into pieces and add to the mixture. 4 In a small bowl, stir together thyme, rosemary, olive oil, vinegar and salt and pepper, mix with veg and spread on a roasting tin. 5 Roast for 35 to 40mins in preheated oven until cooked and golden brown.
