Our new and improved formula keeps stable in hot climates. Now you can cover cakes in humid conditions. To further reduce the challenges of covering cakes on warm sticky days, we recommend you continue to control the air temperature and humidity levels of your work room before and after covering a cake with EasyIce Rolled Fondant. A hot and stuffy room will draw moisture to the fondant and cause condensation. Turn on your air conditioner, or use a room dehumidifier and a fan to help maintain cool, dry air temperatures and a smooth dry surface to your cake. Freezing your EasyIce Cakes "Freeze a fondant-covered cake by allowing the fondant to harden just slightly before wrapping it in plastic wrap. Set the cake in your freezer for 20 minutes, then remove, wrap and return the cake to your freezer. Thaw a frozen cake in your refrigerator and then bring it to room temperature before removing the plastic wrap.” Store and freeze your cakes covered in EasyIce Rolled Fondant for extended periods of time in a cake box. Place the plastic wrapped cake in a box and seal. This will help prevent ice crystals from forming on your cake. Defrosting your EasyIce Cakes Remove your packaged cake out of the freezer. Place in the fridge (keep it in the box) and allow to thaw. Bring the refrigerated cake back to room temperature in a cool room before removing it from the cake box and plastic wrap. This slow warming will prevent moisture from the cake seeping through the fondant and causing condensation. When completely defrosted, unwrap and remove the cake from the box and allow to sit at room temperature. If you are not sure if your cake is completely defrosted, have a fan ready to lightly blow air across the cake. This light breeze with prevent the cake from developing condensation while continuing to defrost. If the day is particularly humid, the fan will keep the surface dry. Cakes covered with McCall’s EasyIce Rolled Fondant will freeze and defrost well by following these guidelines. Refrigerating your EasyIce Cakes There are many types of refrigerators and humidity control settings (moisture control) in most fridges. Here are some recommendations for the different types of refrigerators: Commercial Refrigeration (coolers) Often used for storing all your wet and moist ingredients, cream, cakes, eggs, etc. Commercial coolers generally have a high moister (humidity) level. High usage; doors opening often will increase the air moisture level. In a commercial bakery this is where many cakes are stored. EasyIce Rolled Fondant cakes should be store in a sealed box in this type of fridge. Cakes stored like this should last 3 to 4 days with little or no deterioration of the fondant. Bakery Showcase Refrigeration A well-controlled refrigerator with stable humidity (moisture) levels usually works best to display your fondant cakes. Be sure your humidity level (moisture level) is monitored or set to prevent contents from drying out. McCall’s EasyIce Rolled Fondant cakes can be stored in these “showcase” fridges just like any other cake on display. The length of time will depend on your fridge settings. Our tests show that 2 to 3 days is the best optimum time. Results may vary depending on your settings. Your Refrigerator at Home Most fridges at home have different areas for meats and a crisper for vegetables. The rest of the fridge is for goods that are in packaged containers. This is a good area to store rolled fondant cakes. It is always best to store the cake(s) in a box whenever possible, which will allow the rolled fondant cake to keep 2 to 3 days without any deterioration of the fondant. Bring the refrigerated cake back to room temperature in a cool room before removing the box and or plastic wrap. This slow warming will prevent moisture from seeping through the fondant, causing condensation. Room Temperature No room in the refrigerator? No problem, just store your fondant-covered cake in a pastry box at room temperature.
