Pre heat the oven to 180oC/350oF/Gas Mark 4

Beat together the butter and sugar with a wooden spoon until pale and fluffy. Beat
in the egg and vanilla essence

Sift the baking powder and flour together and beat into the mixture. Add the
chocolate chips and stir until well combined

With a large metal spoon, place 8 large spoonfuls of the mixture onto a lightly oiled
baking sheet. Make sure you leave plenty of space around them to spread during
cooking

Bake in the oven for 12-15 minutes until golden. Allow to cool on the baking sheet
for 2-3 minutes before removing to a cooling rack. Can be stored in an air tight
container for up to 5 days.
