Calcium Chloride Food Grade
Applications
Calcium chloride (CaCl2), is an extremely versatile chemical compound.
Ingredient in Fortification or Enrichment of Diary Products
Calcium chloride is used in the production of cheese:
• Promoting greater curd firming and whey expulsion which produces a firmer
textured cheese with a drier appearance, lower in moisture content, and acidity.
• Calcium chloride is used as a source of calcium.
Processing Aid in Beer
In breweries Calcium chloride is used for the following purposes:
• As mineralic nutriment for yeasts and bacteria’s in fermentation processes.
• Regulate hardness of water.
• For the sedimentation of unwanted oxalic acid, to avoid clouding in the beer.
• pH adjustment.
Canned Vegetables and Fruit
Calcium chloride is used in:
•
Pickled foods
•
Canned food
•
Sprayed fruit and vegetables
Because Calcium chloride has an extremely salty taste, it is ideal for pickling.
An added benefit of using it in this manner is that it doesn’t increase the food’s sodium
levels.
In the case of canning, it helps vegetables stay firm.
When spraying fruit and vegetables you avoid the growing of black spots by lack of
calcium. Calcium chloride increases the shelf life of sprayed fruit and vegetables.
