We visited and rated the best places in Brno
Brno’s level of gastronomy has skyrocketed in recent years. All the restaurants, cafés, beer
spots, and bars want their guests to not only enjoy their food or drinks, but also to have an
unforgettable experience that will keep them coming back. Some of these places are so
special that their fame has even reached beyond the borders of the Czech Republic.
We decided to make it easier for you to find excellent places to have dinner, catch up with
friends over a glass of wine or a cup of coffee, or to have a sweet treat with your children.
Our goal here is to give you good advice and to be as objective as possible.

The appointing committee
We contacted organizations and experts specializing in these six areas.
They all know Brno and its gastronomy back to front, so we asked them to select the most
interesting places in March and April 2016.
Czech Bartenders Association
A renowned professional organization, focusing on all disciplines of drink gastronomy, for
both supporters of and professionals in this discipline. It organizes major national and
world competitions, trainings, courses, and seminars for both experts and the public.
A campaigner for observing correct drink preparation procedures.
Czech Sommelier Association
Established in 1997 for professional sommeliers, gastronomy staff, wine fans, hospitality
and tourism secondary schools, and restaurants. A member of the International Sommelier
Association (ASI) since 1998. Organizes sommelier courses.
Association of Cooks and Bakers of the Czech Republic
A professional organization for cooks and bakers from all over the Czech Republic.
Established in 1903! From the very beginning, it has cooperated with similar associations
from all over the world and is recognized as a representative of this profession. Active under
this name since 1993.
Moravian Wine Bank
Established as a business division of ORIONREAL spol. s r.o. in 1993. Deals in winemaking, wine culture, and gastronomy. Follows European and global trends. Sells wine
and organizes international exhibitions, Cesty za vínem wine excursions, trainings, and
commented tastings.
Rudolf Jelínek a.s.
Established in 1894, its liquors quickly made it famous in the Czech Republic and the rest
of the world. Produces various kinds of alcoholic drinks you can taste on Jezuitská street,
Brno.
Kulturárium o.s.
A non-profit organization attracting tourists, arts groups, and professionals. Active in
culture, and creating new traditions. In Brno since 2010. Among its projects are Týden kávy
(Coffee Week) and Brněnský Lunapark aneb Divadlo ke kávě (Brno Amusement Park or
Theater with Coffee).
Zuzana Plíšková – Apetýt, Český rozhlas Brno (Czech Radio – Brno)
Every weekday at 10:15, Czech Radio Brno presents Moravian recipes sent in by its
listeners. And as it is the most popular regional station of Czech Radio, its culinary tips
reach a large number of people.
Association of Hotels and Restaurants of the Czech Republic
For owners and keepers of hotels, guesthouses, restaurants, and schools, as well as
partners offering products for accommodation facilities and restaurants. Its main aim is to
support businesses in the hotel industry and gastronomy.
Nepiju břečky (No Swill For Me)
A blog and online magazine on drink gastronomy. Popularizing the culture of drinking and
following local as well as foreign news in the discipline.
The Evaluators
Each of the six sections of GOURMET BRNO had three evaluators.
Masters of their disciplines! To make sure their evaluations are as objective as possible,
only some of the evaluators were from Brno. All the places were visited in secret in May
2016.

Top Slovak chef and a colleague of Jamie Oliver
Renowned chef and author of cookbooks who worked also in Fifteen, Jamie Oliver’s
restaurant in London. He cooks the program Teleráno, broadcasted by Markíza TV.
Michal Kašpárek
Publicist and former journalist
He used to work for MF DNES, Metropolis, and Computer Press. A freelance publicist since
2010. He knows Brno inside and out and is the author and publisher of a guide to Brno.
He has also numerous articles on Brno in foreign media.
Vojtěch Pospíšil
Editor at Novinky.cz, a fan of gastronomy
He writes on traveling and lifestyle. As part of his job, he has visited a number of restaurants
in the Czech Republic and abroad. Passionate about gastronomy.
CAFÉS EXAMINED BY:
Adam Troubil
Barista and winner of the Mistr kávy (Master of Coffee) contest
He took a barista course in 2005, a secondary school student at the time. Recently on
a winning streak at Mistr kávy: runner-up in 2013, winner in 2014 and 2015. Deals in the
distribution of roasted coffee for households and in catering and training baristas..
Tomáš Zahradil
Head of the Mistr kávy contest
Expert on coffee. His motto: “The worst thing is when you order an espresso and get
a swimming pool instead.” In charge of the Mistr kávy contest with twelve years of tradition
in the Czech Republic. He has been improving the level of professionalism of local baristas
and coffee culture in general.
Kateřina Eichlerová
Head and co-founder of the Kulturárium Citizens Association
As of 2010, coordinates not only Brněnský Lunapark aneb Divadlo ke kávě festival but also
Týden kávy. In 2016, she opened Café pro všechny (Café for everybody) for anyone looking
for a place to work and relax.

Michael Lapčík
Founder and editor at Nepiju břečky
Nepiju břečky is an online magazine on civilized drinking in Central Europe which shows
people what and how to drink. A project manager at Vinařský institute (Wine-making Institute)
which organizes five annual sommelier courses and a number of other educational projects.
Jan Lidmaňský
Journalist and expert on watches as well as culinary art
Through Top Class magazine, where he has been working for 14 years, he discovered
his main hobby – watches – and gastronomy, too. Combines these two passions on his
#watch_the_food Instagram account.
WINES TASTED IN WINE BARS BY:
Ivo Dvořák
Vice-president of the Association of Sommeliers of the Czech Republic
An expert on wine as well as other alcoholic drinks, a holder of wine tasting certificates and the
international OIV tasting certificate. Winner of 11 sommelier contests in the Czech Republic.
Michal Šetka
Expert on wine and sommelier
A wine taster and publicist. In charge of courses, tastings, and lectures on wine at the
Prague Culinary Institute. As a taster, he has participated in a number of competitions both
in the Czech Republic and abroad.
Martin Procházka
Sommelier and lecturer at Vinařský institut (Wine-making Institute)
Wine evaluator at local contests, a member of the Association of Sommeliers of the Czech
Republic. He organizes and leads tasting and wine tours all over Europe.

Qualified baker and teacher
She teaches future bakers at Charbulova secondary school in Brno. Her goal is to educate
students so that they do the baker discipline credit.
Pavla Permedlová
Deputy chair of the Association of Cooks and Bakers of the Czech Republic
Qualified baker with years of experience, she often participates in baking contests all over
the Czech Republic as a member of the evaluation committee
Nasa Přikrylová
Qualified baker and teacher
Having worked as a baker for various companies, she is currently a teacher at Charbulova
secondary school in Brno, preparing students for professional contests. Very successful at
her work!
BARS EXPLORED BY:
Achim Šipl
Member of the Czech Bartenders Association and Czech Bartenders Team
Preparing cocktails for over 20 years, he has won a number of awards, mainly the World
Champion in mixing non-alcoholic cocktails. Devoted to passing on his knowledge and
further educating professionals. Has published professional texts and books.
Aleš Svojanovský
President of the Czech Bartenders Association since 2008
Several years of experience in bartending both in the Czech Republic and abroad.
Jan Liška
Bartender with twelve years of experience
Successful also in Australia and the United Arab Emirates, he has gained experience and
learned a number of styles in mixology. His cocktails reflect his passion for classic as well
as modern bartending.
