PRESIDENT’S MESSAGE STEP IN TO STEP UP When I took office in May last year, I articulated my mandate to transform the Club into a fun and inviting playground that offers a diverse range of products to meet the different needs of our members. I am happy that while this is still a work-in-progress, the vision is steadily turning into reality. For that, I would like to thank my Management Committee, and the Club management and staff for working so very hard this past year. In catering to the evolving gastronomic preferences of our members, the F&B department launched new menus for Jade Phoenix, Jackson Miller and The Palms in September. Patronage at these outlets has improved significantly since. Additionally, our head chefs designed exquisite menus for special occasions such as Valentine’s Day, Mother’s Day and Father’s Day, which were very well received. In particular, the music and culture themes were hugely popular. We have paid serious heed to this consumer preference and bumped up such entertainment with exciting new themes. Our cover story gives a sneak peek into 2017’s line-up, together with the highlights of this year’s first theme night in March “All That Jazz”. The physical aspects of a social club are also important dimensions that determine its allure. Over the past year, our Integrated Estate Services Department has undertaken many infrastructure improvement works to spruce up the Club and make it more attractive and safer. The “Spotlight” article in this issue features seven of these projects that range from landscaping to slip-proofing to switching to energy-saving lighting. Facility upgrading and maintenance projects are hefty but worthy and necessary investments that spiff up the Club and make for better member experience. Each year at the Club’s Annual General Meeting (AGM), we present to members our budget wish list that includes such CAPEX items for approval. I cordially invite and urge you to attend this year’s AGM on Sunday, 21 May to examine the budget and share your thoughts with the Management Committee. Meanwhile, life is boring for him as he continues his daily grind. I am sure many of us can identify with him. As members of our Club, you don’t have to feel this way. More than 300 members and guests enjoyed a rip-roaring evening at Comedy Nite with Kumar on 24 March at the Grand Ballroom. In preparation for their next holiday, around 40 members registered for a talk at Emerald Court on 19 March by Paveway Explorer Holidays on exotic holiday destinations such as Armenia, Balkans, Georgia and Sicily. You can further break the routine by taking up yoga, pilates, martial arts or Chinese brush painting and your children can try out Kids’ Latin dance classes, all of which are available at the Club. We often hear members wanting to attend events and activities at our Club with the same group of guests but are constrained by the Club Rule that allows the same guests to visit the Club not more than once a week. The proposal to increase the number of times you can bring the same guests to the Club will be tabled at the Annual General Meeting on Sunday, 21 May. Your presence is needed to effect this and other proposed rule changes. Come and exercise your power to change! Actually, small acts of kindness are the most satisfying and enriching ways to jazz up your day. Holding that elevator for a member or parking your car within the lot so that the driver in the car parked beside yours need not climb to reach the driver seat from the back shows your kindness and consideration for others. It sure perks up the day for you and your fellow members. Showing your membership card to our staff before they serve you shows your thoughtfulness and understanding, as they would otherwise be put in a difficult position and not be able to render service to you. We are serious about maintaining the exclusivity of your membership. Only those who produce their membership card will be served. Membership matters! All trespassers will be declared persona non grata and repeat offenders handed over to the police. CONVERSION OF MEMBERSHIP Parents are responsible to ensure that their children’s conversion to Junior Membership and to Ordinary Membership is made within the prescribed six-month period from their sixteenth and twenty-first birthdays respectively. In the event that this option is not exercised after a period of 18 months (for active members) or 24 months (for absent members) from the date he/she reaches 16-year-old and 21-year-old, his/her right to convert to Junior Membership and Ordinary Membership respectively shall cease. Ashley was also conferred the Most Valuable Swimmer (Girls) for the third year in a row. She also broke the national Girls under-14 record for 50m backstroke with a timing of 30.26s, rewriting the existing record of 30.39s set in 2014. The result: a spruced up garden club that is also safer and kinder to the environment. Facility upgrading and maintenance projects are often hefty investments but the Club has always endeavoured to complete the jobs within the budget that is approved at the Annual General Meeting by appointing vendors that provide value-for-money quality work. 20 SPOTLIGHT Where W h :M Main i Entrance E Work done : Installation of Vertical Garden The rows of potted plants at the entrance of the Club were replaced with a beautiful vertical garden with water features. The entrance and Main Lobby were also given a fresh coat of paint. The Club entrance now looks more warm and welcoming. Where : Main Lobby Work done : LED Light Replacement The Club’s Main Lobby projects a new shine after the pin lights were replaced with brighter energy-saving LED lights, which achieve an estimated 80% reduction in power consumption. 21 SPOTLIGHT Where : Competition, Recreation and Learn-to-Swim Pools Work done : Replacement of Pool Mats The worn-out mats surrounding the pools were replaced with grass carpets that are durable, low in maintenance and aesthetically pleasant. Where: Sauna Rooms at MSCP Changing Rooms Work done : Refurbishment The Sauna Rooms were hacked and rebuilt using pine wood. In addition, we have replaced the benches and heater with brand new ones. 22 SPOTLIGHT Where : Cabana Walkway Work done : Flooring Renovation and Installation of Strip Lights Safety of our members is a paramount concern. To this end, we have replaced the flooring along Cabana walkway and area around the Tennis Courts with anti-slip tiles. We have also replaced the T5 lights with strip lights that illuminate the surroundings better at night. 23 SPOTLIGHT Where : Jackson Miller Work done : Reconstruction and Painting of Ceiling, Varnishing of Panels and Replacement of Wallpaper Our casual semi-fine dining restaurant underwent a much-needed month-long intensive renovation in July last year, which include the reconstruction and repainting of the ceiling that was stained due to air-conditioning condensation and peeling plaster. In addition, the lights and wallpaper were replaced and a new coat of varnish given to the wooden panels and counter to give the restaurant a classy look and feel. 24 SPOTLIGHT Genalyn Puzon, Manager of the Club’s Integrated Estate Services (IES) Department, and her team are the “heroes” behind the infrastructure improvement projects. The IES Sub-Committee, chaired by Mr Wee Keng Pak, guides and advises the IES Department as well as the Club’s Security and IT & Innovation Departments. Where : Koi Pond Work to be done : Landscaping Our Koi Pond, a focal point of the Club, will be rejuvenated with the replacement of the old timber decking and addition of new varieties of trees and colourful flowers, including water plants such as lotus and water lily. Work is expected to be completed by May. Artist’s impression 25 F&B May Prom otion @ The Palm s $18.80 INGREDIENTS Sous Vide Duck Leg 1 duck leg 1 sprig fresh thyme 1g nutmeg mace 80ml olive oil Dry Roast ½ garlic 1 pc bay leaf 1g black pepper Brine 1.05ℓ cold water 15g sea salt 1 orange, zest and sliced 26 Lyonnaise Potatoes 3 large red-skinned potatoes 2 red onions, sliced 1 bunch celery leaves, sliced 3 pcs chives, finely chopped 1 tsp unsalted butter 1g sea salt 1g black pepper Cranberry Ragu 200g fresh cranberry beans, husk removed 1 strip smoked bacon, sliced 2 large yellow onions, diced 2 pcs sage leaves, sliced 1 cup white wine 1 tsp white balsamic vinegar ½ cup fresh cream 1g black pepper F&B SOUS VIDE DUCK LEG CONFIT Chef Hew’s Recipe The Sous Vide Duck Leg Confit is a traditional French dish and Chef Hew cooks it in the traditional way, no less. He is a firm believer in trusting instincts in cooking, as the same ingredients can vary in taste and freshness, and he asks readers to use recipes only as a guide. Chef Daniel Hew Executive Sous Chef Chef Hew joined the Club in 2002 as a Chef de partie. He currently assists Executive Chef Daniel Sng in overseeing the operations of The Palms’ kitchen and central kitchen. METHOD To prepare brine, add sea salt, orange zest and slices into cold water. Add duck leg and marinate for six to eight hours or overnight in the refrigerator. Drain brine using colander and place duck leg into a vacuum sealed bag. Add olive oil, thyme, nutmeg mace and dry roasted bay leaves, garlic and black pepper. Seal bag and place in a water bath of 75°Celsius. Cook duck leg for eight hours, remove and shock in ice water for five minutes. Sauté bacon in butter until light brown, add onions and cook until soft. Deglaze with white wine and reduce portion by half and add cranberry beans, sage and white balsamic vinegar. Lastly, season with black pepper and blend with fresh cream. Boil potatoes for 15 minutes. After potatoes are cooled, slice and panfry with butter until brown. Add onions and sauté until light brown, add celery leaves and chives.
