Fast and fantastic snacks! Smoothies make a fantastic snack choice – healthy, quick and delicious. And houmous with fresh vegetables is easy to make and so tasty too! Berry Burst Smoothie (serves 2) Healthy Houmous 2 small pots Greek yoghurt (check sugar content as this can vary by brand) 2 cloves garlic, finely chopped 1 tin chickpeas, rinsed and drained Large handful of blueberries (or mixture of berries) ½ lemon A banana, chopped Olive oil A little skimmed milk Paprika (optional) Two or three ice cubes Put everything into a blender or use a hand-held blender. Blitz until smooth. Add a bit of milk if you want to make it less thick. Blueberry Beet Smoothie (for 2) 2 small pots Greek yoghurt Large handful of blueberries 2 fresh cooked beetroot A spoonful of any seeds (flax, linseed etc.) – optional Put everything into a blender or use a hand blender and blitz! 1 teaspoon tahini paste Method: Put everything except the oil and paprika into a blender and blitz (or use a hand blender). Gradually add the olive oil, blending as you go. Serve with a sprinkling of paprika, pitta bread and slices of raw peppers and carrot. No tahini paste? Simply put 1 cup of sesame seeds into a pan with no oil and ‘toast’ for a few mins, stirring to make sure they don’t burn. Cool the seeds, then put into a blender and start blending with ½ cup olive oil, adding the oil a little at a time, until you have a thick nut butter. !
