11th Annual Winter Texan Appreciation Fiesta

Curiosities:
• The first New Year’s celebration dates back 4,000 years. Julius
Caesar, the emperor of Rome, was the first to declare January 1st
as a national holiday. He named the month after Janus, the
Roman god of doors and gates. Janus had two faces, one looking
forward and one looking back. Caesar felt that a month named
after this god would be fitting.
• About 1 million people gather in New York City’s Times Square
to watch the ball drop. The Times Square New Year’s Eve ball
drop came about because of a ban on fireworks. The first ball in
1907 was 700 pounds and was lit with 100 25-watt lights. The
current ball puts the old one to shame (thanks to technology).
Today, it is covered in 2,688 crystals, is lit by 32,000 LED lights,
weighs 11,875 pounds and is 12 feet in diameter.
• Many people ring in New Year’s by popping open a bottle of
champagne. Americans drink close to 360 million glasses of
sparkling wine during this time. The bubbly stuff dates back to
the 17th century, when the cork was invented.

Seared Chicken with Creamy
Spinach and Artichokes
Ingredients:

Avocado-Bean Wrap
Ingredients:
• 2 Ripe Avocados
• 1 Cup(s) Fresh or Jarred Salsa
• 2 Teaspoon(s) Olive Oil
• 1 Red Bell Pepper, Chopped
• 2 Medium Carrots, Shredded
• 1/2 Teaspoon(s) Ground Cumin
• 1 Can(s) (15-oz) Low-Sodium Black Beans, Rinsed
• 3/4 Cup(s) Fresh Cilantro, Chopped
• 4 Whole-Wheat Wraps
• 1/2 Head(s) Romaine Lettuce, Shredded
• Lime Wedges, for Serving
Instructions:
• Cut 1 avocado into 1/2-in.
pieces. In a small bowl,
mash the remaining avocado with 1/4 cup salsa.
Cover and set aside.
• Heat the oil in large skillet
over medium-high heat. Add
the pepper and carrots and
cook, stirring occasionally,
until just tender, 3 to 4 minutes. Stir in the cumin and
cook for 1 minute.
• Add the beans and the remaining 3/4 cup salsa and cook
until heated through. Remove from the heat, stir in the
cilantro and chopped avocado.
• Spread mashed avocado-salsa mixture on each wrap.
Divide the lettuce and bean mixture among the wraps
(about 1 cup each) and roll up. Serve with lime wedges, if
desired.
Yield: 4 Servings
Total Time: 25 Minutes (Prep)

• 4 (6 Ounces Each) Boneless, Skinless Chicken Breasts
• Kosher Salt
• Pepper
• 1 Lemon, Halved
• 1 Can(s) (14-Ounce) Artichoke Hearts, Halved
• 2 Clove(s) Garlic, Thinly Sliced
• 1/2 Cup(s) Dry White Wine
• 1/4 Cup(s) Lowfat Sour Cream
• 1 Bunch(es) Spinach, Thick Stems Discarded
Instructions:
• Heat 1 tablespoon oil in a large skillet
over medium heat. Season chicken
with 1/2 teaspoon each salt and
pepper and cook until golden brown,
5 to 6 minutes.
• Turn chicken, place lemon in skillet
cut-side down, and continue cooking
until chicken is cooked through, 5 to
6 minutes more. Squeeze juice of
cooked lemons all over chicken.
• While chicken is cooking, heat remaining tablespoon oil in a second
skillet over medium-high heat. Add artichokes, cut-side down, and
cook until golden brown, about 3 minutes. Reduce heat to medium,
add garlic and cook, tossing until golden brown, about 2 minutes.
• Stir in wine and cook for 2 minutes. Stir in sour cream. Add spinach,
season with 1/4 teaspoon each salt and pepper, and cook, tossing
gently, until spinach begins to wilt, 1 to 2 minutes. Serve with
chicken.
Yield: 4 Servings

Coffee Grounds: Use your morning pick-me-up to eliminate odors in
the fridge. Simply place coffee grounds, new or used, in a bowl on a
shelf. Replace them every two months for a fresh, slightly caffeinated
smell.
The Microwave: To keep bacteria from taking up permanent residence
in your kitchen sponges, rinse them with water at the end of each day,
squeeze, then put in the microwave for three minutes. Let cool before
touching. Do the same with your cutting boards, if they are microwaveable.

Improving Memory Tip 4:
Eat a Brain-Boosting Diet
Just as the body needs fuel, so does the brain. You probably
already know that a diet based on fruits, vegetables, whole
grains, “healthy” fats (such as olive oil, nuts, fish) and lean
protein will provide lots of health benefits, but such a diet can
also improve memory. But for brain health, it’s not just what
you eat—it’s also what you don’t eat. The following nutritional
tips will help boost your brainpower and reduce your risk of
dementia:
• Get your omega-3s. More and more evidence indicates that
omega-3 fatty acids are particularly beneficial for brain
health. Fish is a particularly rich source of omega-3,
especially cold water “fatty fish” such as salmon, tuna,
halibut, trout, mackerel, sardines, and herring. In addition
to boosting brainpower, eating fish may also lower your
risk of developing Alzheimer’s disease. If you’re not a fan
of seafood, consider non-fish sources of omega-3s such as
walnuts, ground flaxseed, flaxseed oil, winter squash,
kidney and pinto beans, spinach, broccoli, pumpkin
seeds, and soybeans.
• Limit calories and saturated fat. Research shows that diets
high in saturated fat (from sources such as red meat, whole
milk, butter, cheese, cream, and ice cream) increase your risk
of dementia and impair concentration and memory. Eating
too many calories in later life can also increase your risk of
cognitive impairment. Talk to your doctor or dietician
about developing a healthy eating plan.

• Eat more fruit and vegetables. Produce is packed with
antioxidants, substances that protect your brain cells from
damage. Colorful fruits and vegetables are particularly
good antioxidant “superfood” sources. Try leafy green
vegetables such as spinach, kale, broccoli, romaine lettuce,
chard, and arugula, and fruit such as bananas, apricots,
mangoes, cantaloupe, and watermelon.
• Drink green tea. Green tea contains polyphenols, powerful
antioxidants that protect against free radicals that can
damage brain cells. Among many other benefits, regular
consumption of green tea may enhance memory and
mental alertness and slow brain aging.
• Drink wine (or grape juice) in moderation. Keeping your
alcohol consumption in check is key, since alcohol kills
brain cells. But in moderation (around 1 glass a day for
women; 2 for men), alcohol may actually improve memory
and cognition. Red wine appears to be the best option, as
it is rich in resveratrol, a flavonoid that boosts blood flow
