Magic Lemon Pudding.
Ingredients: For the sponge
100g Self-raising flour
100g Butter , softened
Place the flour, butter, sugar, lemon rind and 2 eggs in a bowl or mixer.
Whisk together, adding a little milk if needed, to make a soft dropping
consistency.
Place in a greased pudding dish.
100g Caster sugar
2 eggs
Rind from 1 lemon, grated.
For the Sauce:
Put the lemon juice in a jug and make up to 200 ml with boiling water.
Add the sugar and corn flour and stir.
Gently, pour the liquid on top of the pudding mixture in the dish.
75g Caster sugar
2 teaspoons corn flour
Juice of 1 lemon
Bake for 25 – 35 minutes, until the top is golden and firm.
Serve with yoghurt or cream.
Oven temperature
Gas mark 5, 190 degrees (170 degrees in fan oven)
