Basic Sweet Muffins

Basic Sweet Muffins
Yield: 10-12 muffins
INGREDIENTS:
2 cups flour
1/3 cup sugar
1 Tablespoon baking powder
½ teaspoon salt
1 egg
¾ cup milk
½ cup vegetable oil
1 teaspoon vanilla extract
½ cup chocolate chips (optional)
DAY 1 DIRECTIONS:
1. DRY INGREDIENTS: In small bowl, mix flour, sugar, baking powder and salt. Sift all
dry ingredients together into a medium bowl. Set aside. Do not wash the flour sifter
– instead wipe it down with a DRY paper towel!
2. WET INGREDIENTS: Beat egg slightly with a fork in a large bowl. Add milk, oil and
vanilla: stir ingredients.
3. Add the DRY INGREDIENTS (small bowl) to the WET INGREDIENTS (large bowl).
4. Stir just enough to moisten dry ingredients.
5. Gently fold in chocolate chips.
6. Pour batter into a labeled gallon size Ziploc bag. Let out air and seal tightly. Be
7. sure to wipe off any extra batter drippings.

DAY 2 DIRECTIONS:
1. Preheat oven to 400 degrees.
2. Grease bottoms of 12 muffin tin cups.
3. Fill 10-12 muffin cups half full (be sure to wipe any
spills off top of muffin pan).
4. Bake 15-20 minutes or until golden brown.
5. Stick a toothpick straight through the top of the largest muffin. If the
toothpick comes back out clean the muffins are cooked all the way. If the
toothpick comes out wet with batter then the muffins need to bake for
additional minutes.

VARIATIONS:
Oatmeal Chocolate Chip Muffins: Substitute 1 cup of flour for quick cooking oats.
Blueberry Muffins: Fold in ½ cup fresh or frozen (thawed) blueberries during the last few strokes
of mixing.
Raisin Muffins: Fold in 1 cup raisins during the last few strokes of mixing.
Orange Muffins: Substitute ½ cup orange juice for the milk.
Apple Muffins: Add 1 cup grated raw apple to the liquid ingredients and add ½ tsp. cinnamon to
the dry ingredients.
Streusel Muffins: In a small bowl, combine ¼ cup packed brown sugar and ¼ tsp. cinnamon. Add 1
tbl. of slightly softened butter or margarine. Stir together with fork and sprinkle the streusel over the
tops of almost any of the above muffins before baking. You can also layer some batter, then
topping, batter and more topping!
