Nitty Gritty Grain Company of Vermont uses a blend of organic hybrids and open-pollinated, heirloom corn—similar to the varieties
cultivated by the indigenous people of the Champlain Valley. It's rich in color, flavor and nutrients. Our wheat is winter wheat (it’s
planted in the fall) so it has a rich, full-bodied flavor that develops under our Vermont snow cover. Care in growing, harvesting, and
preparing our grains make them the best tasting on the market–from any State.

OUR PRODUCTS
We produce our cornmeal and flour in small batches to preserve freshness. And we grind the
whole berry so you get the full spectrum of flavors and nutrients. Because our products are whole
grains we freshness date them and recommend they be stored in the freezer or refrigerator.
MIX
CORNBREAD, PANCAKE & MUFFIN MIX
One 16-ounce package makes 12 muffins, 60 pancakes or an 8-inch pan of cornbread. Recipes are
included. Ingredients: Organic ground corn, organic wheat flour, organic sugar cane, organic dry
buttermilk, baking powder, sea salt, baking soda.
HIGH MEADOW YELLOW CORNMEAL
CORNMEAL
Our yellow cornmeal is produced from organic dent hybrid corn. The medium grind produces a pleasant
chewiness with a sweet, mellow, corny flavor—a good general purpose cornmeal.
WAPSIE VALLEY CORNMEAL
Wapsie Valley is an heirloom field corn that dates back to the 1850s. The plant produces bronze, copper,
bright red, and orange ears. The kernels are intensely flavored, quite hard, and have a higher nutrient
content than typical cornmeal corns. The corn grinds into a rich orange meal with an earthy, robust flavor
and a crunchy texture.
OUR BLEND CORNMEAL
When we developed the formula for our Cornbread, Pancake & Muffin Mix, we created this precise
mixture of our High Meadow Yellow and Wapsie Valley cornmeals. The result is a cornmeal with
balanced flavor and just the right about of chewiness.
W H E AT
UNBLEACHED PASTRY FLOUR
This flour is made from soft winter wheat, which has less gluten than wheat used for bread flour. This
flour is nutritious and rich in fiber. Use it to make pie crust and baked goods, leavened with baking soda
and/or baking powder.
HARD WINTER WHEAT BERRIES
These are the entire wheat kernel (except for the hull), comprising the bran, germ, and endosperm. They
are nutrient rich and an excellent source of dietary fiber. Soak then simmer until al dente and add them to
salads or bake into bread to add a crunchy texture.
WHOLE WHEAT FLOUR
SOY
This whole-grain flour is milled from hard red winter wheat. Baked goods made from it will have a richer
color than those made with white wheat or bleached red wheat. The protein content is about 10.5%.
It makes tender yeast raised breads and pizza dough.
SOY BEANS
These non-GMO clear-hilum beans are suitable for soy milk, tofu, tempe and other fresh or fermented
soy foods. They can also be cooked and served like other dried beans.
