family farmstead has been passed from

focused on biodynamic farming processes
and their farm includes horses, sheep, bulls,

dairy cows. Biodynamic farming practices
and the natural bounty of the region help
produce extremely high quality milk rich

The animals spend at least 7 months of the
year outside, grazing on forage rich with
dandelion, sorrel, and marsh marigold.
The farm is located only 1500 meters from

Microwave the silk just to about 80 degrees
Whisk in milk, and add liqueur to taste if desired
Add flour and whisk to incorporate
Lightly butter ramekins and fill with the batter

Bake at 250° in a water bath for 30-35 min or until a knife comes out clean

At Peterson, we love seeking out great cheeses to help you keep your selection fresh and exciting! Our French Airship
program offers access to a select group of delicate French specialty cheeses, and this month we are giving Le Sangle a welldeserved moment in the spotlight.
Le Sangle is produced by Fromagerie Badoz, which has a rich history in the world of cheesemaking. (The first Badoz family
member to become a cheesemaker did so in 1830!) Located in Pontarlier, the capital of the Haut Doubs, Fromagerie Badoz has
been producing cheeses that truly represent the taste of this mountainous region of the Jura since 1960.
Le Sangle is a soft-ripened cheese with distinctive strips of spruce bark wrapped around the outer rind. Called ‘sangles’, these bark
strips have been harvested for over 200 years in the Jura and lend their name to this ooey-gooey delicacy. Le Sangle is made in the
tradition of Vacherin Mont d’Or, but differentiates itself by the use of pasteurized cow’s milk. The thick paste is somewhere between
a ganache and a thick, unctuous custard, with fresh, milky, buttery flavors that lead to a savory, grassy, and slightly woodsy finish.
The rounds are aged in the family’s caves, where they are regularly washed and turned while aging.
This cheese easily finds its place as the centerpiece of a cheese board, paired simply with a crusty baguette, cornichons, and cured
meats. Tart apples and juicy pears are an easy match for a contrast of savory and sweet, and the lush paste can also be quickly
and easily transformed into a self-contained fondue when warmed! However you choose to serve it, Le Sangle is sure to become
