Oaxacan Roasted Chicken

We developed a unique marinade that we use to slowly roast
our chicken. We then make a pan sauce of tequila, chicken stock,
and roasted garlic butter to garnish a half chicken resting on top
of creamy polenta. Finished with caramelized butternut squash,
citrus pepitas, and a roasted pablano infused oil.

Marinated for 24 hours in our signature Oaxacan rub, we grill and slow roast
our brisket. Then, we soak it in a tequila tomato based sauce. It is garnished
with salsa verde, onion, and cilantro, and served with pork belly black beans
