All classes include a sampling of the dishes prepared in class
to be enjoyed in the Loft and a copy of the recipes for you to

Class Format:
All classes are demonstration format unless indicated
otherwise. Interactive classes allow you to participate in the
preparation of some aspects of one or more dishes with
the chef and other participants, or as indicated in the class
description.

wine! For an additional $9 you can sit back and relax as a
Loft Team Member pours you a glass of wine to enjoy with
your meal prepared by our superb chefs for classes where

Caribbean Escape
There are many reasons to love the Caribbean – one reason
is the food. Let Personal Chef Luleta Brown take your palate
to the Caribbean with black-eyed peas and pumpkin salad,
jerk chicken breast with mango-chayote slaw, tostones (fried
plantains), and a mouth-watering pineapple-coconut upsidedown cake with rum cream for dessert. $35

Simple Mexican Dishes
Mexican-Hungarian cooking instructor Hendrik Varju will take
you on a tour of Mexican dishes you’ve never had prepared
quite in this way. He’ll start off with a radish pico de gallo
featuring radishes, cucumbers, jalapeño peppers, green onions
and lime juice, served with tortilla chips. Then you’ll enjoy
flank steak tacos served with a stunningly simple yet delicious
orange chipotle sauce and caramelized onions. Hendrik will
teach you all about the grain direction of the meat and how to
slice it perfectly for that succulent mouth feel. You’ll also enjoy
pinto beans with slow cooked bacon, onions and gold tequila!
Finish off with a delicious Mexican rice pudding with raisins
and the original Mexican cinnamon. $35

Praise for the Braise
With today’s tough economy, many families really have to
stretch out the dinner budget. Good food never comes with
a price but rather the love we put into it. Tonight let Chef Jim
Comishen show you the wonderful world of braising. These
surprisingly quick, economical and great tasting meals will
surely be a hit with the whole family: classic coq au vin from
France, a wonderful beer braised beef and mushroom stew
from the British Isles, and a classic pork goulash from Hungary.
A selection of rustic breads from our bakery will be served to
accompany these dishes. $35

Join us for an evening cooking class with our Longo’s Loft team
members as we show you how easy it is to work with pulses.
Pulses have recently become the “It” food and everyone is
coming up with new and ingenious ways to use pulses as
part of their everyday cooking. In this class our Loft Team will
teach you how to make: Thai peanut hummus, Moroccan sweet
potato and lentil soup, and black bean brownies. $15

Fish & Seafood Techniques
In this class, Chef Deji Oduwole will cover the basics of
selecting, dressing and cleaning seafood. We will teach you
how to fillet round and two-sided fish. We will clean and
examine the fish, then demonstrate five different cooking
methods: grilling/broiling, pan roasting, baking, poaching
and frying. This class is part demonstration and part handson. The menu consists of fried calamari with a lemon aioli,
Mediterranean grilled octopus salad with grilled garlic bread,
and pan-seared white fish with asparagus, brown butter and
lemon. $40

Gather Cook and Learn: The Power of Pulses
Join us for an afternoon cooking class with our Longo’s
Loft team members as we show you how easy it is to work
with pulses. Pulses have recently become the “It” food and
everyone is coming up with new and ingenious ways to use
pulses as part of their everyday cooking. In this class our
Loft Team will teach you how to make: Thai peanut hummus,
Moroccan sweet potato and lentil soup, and black bean
brownies. $15

Everyone to the table to eat! In this class, Chef Laura Boyd will
take you on a culinary journey through Italy, where you will
learn how Italian cuisine creates such complex flavours with
such simple recipes. One of the secrets is quality ingredients
imported from Italy! You will have to come to class to find out
the rest. You will sit down to the table for a traditional Italian
meal beginning with an antipasto of fresh bread, meat and
cheese, then zuppa (soup) with greens and sausage. Next,
we will move on to secondo, a braised beef ragu with porcini
mushrooms and insalata of mixed greens, crispy prosciutto
and Italian cheese croutons. For the end of the meal, or dolce,
you will learn how to make a balsamic reduction and pair it
with fresh strawberries for a simple and fresh dessert! We
recommend bringing your appetite along on this journey.
Buon Appetito! This class is part of Longo’s “Made in Italy”

Bento Sushi Making (Interactive)
Learn how to make fresh sushi with Bento’s highly trained
expert chefs. Master the art of sushi preparation with recipes
for the perfect rice and tricks for creating and forming your
favourite sushi rolls. You will also get a chance to see an
exciting demonstration on how to prepare the more advanced
Nigiri sushi. You will not want to miss it! All attendees receive a
sushi mat to use during the class and to take home courtesy of

Let’s Bake with Phyllo (Interactive)
Tonight join Chef Heather Johnson and learn to bake with
phyllo. You’ll learn easy tips and tricks to use phyllo so you can
produce out-of-this-world appetizers and desserts. To begin,
we’ll be making creamy chicken bites, along with a caramelized
onion tart topped with arugula and goat cheese, and pesto
bundles. Next, we’ll try our hand at a few desserts: a chocolate

Flavours from Around the World
First you bake and then you take them home! Who couldn’t
use a few new recipes in their arsenal? In this class, Chef Laura
Boyd will teach you tricks and treats of spring baking recipes.
You will make berry white chocolate scones, coconut lime
cookies, chocolate egg shortbread cookies, grapefruit cupcakes
and chocolate brownies with a toffee crunch! As a bonus,
Chef Laura will also give you the recipe for her yummy
chocolate sugar cookies, which you will decorate using a
few special tricks she will teach you. And don’t worry about
overdoing the sugar…we will provide a box for all of your
delicious goodies so you can take them home to share with

Culinary Boot Camp...Back to Basics
(Interactive)
Let Chef/Culinary Instructor John Bela be your culinary drill
sergeant for this evening’s basic training two-hour interactive
boot camp session. You will be cooking like a chef once you
learn basic knife skills and the importance of mis-en-place in
preparation. Our happy culinary campers will focus on the
techniques of pan-searing, stir-frying and roasting meats and
seafood and how to make an accompanying sauce for each.
The concept of mis-en-place is stressed throughout the class
as we make pan-seared pork tenderloin with an apple-onion
and mustard sauce, pan-seared salmon with a luscious beurre
blanc sauce, Thai basil beef stir-fry, and pan-fried spicy bourbon
BBQ shrimp. The class will begin with every student making his
or her own Thai fresh rolls to learn and master knife-handling
skills. Be prepared to say, “Yes, Chef!” $35

Fifty Shades of Chocolate
Chocolate is about to get heated. Who says you can’t start
your evening with something decadent, after discovering the
many pleasures of chocolate. Tonight, Chef/Culinary Instructor
John Bela will tempt your wild side by creating savoury and
sweet chocolate recipes to satisfy your insatiable appetite for
all things chocolate, just in time to start a perfect romantic
evening with that someone special. Sit back and enjoy the ride
as tonight’s exotic menu features harissa-spiced tomato and
dark chocolate soup, baby spinach and caramelized pear salad
with a milk chocolate-balsamic dressing, and toasted almonds
and dark chocolate covered cranberries. The kitchen heats up
with a cocoa nib and fennel-encrusted pork tenderloin with a
white chocolate sauce and cocoa-dusted roasted cauliflower
for your entrée. A sinful double espresso chocolate torte with
Kahlúa caramel will help whip the evening into shape. $35

tarragon chicken, green goddess dressing, and Meyer lemon
and sage cocktail. $15

around the world in two hours. You’ll get to sample a little bit
of spice from three different regions. Our delicious and glutenfree menu includes a stop in Italy with a mushroom Bolognese
served over penne pasta. Next we’ll head North to Egypt where
we’ll enjoy roasted snapper and dukkah spiced greens. Finally
for dessert, a hint of the tropics with coconut, chocolate and

Fisherman’s Pier
Tonight we’re back in the kitchen with Chef Jim Comishen as
the legend of great seafood continues. We start with escargots
“Chef Jim” style, served over phyllo cups and finished with
Pernod. Next it is an elegant, creamy and rich seafood chowder
laced with sweet sherry, followed by a salmon fillet with
wild mushroom stuffing “en croute” in puff pastry. We will
accompany this dish with a nutty basmati rice and an elegant
parsley and wine sauce. Fishermen around the world would be
proud. $40

Indian Flavours Part 2
Chef Christopher Pires loves Indian food, but not the
complexity of all the spices. These recipes will make a great
addition to your weeknight repertoire. Simple ingredients,
great taste. Mulligatawny will be your new winter soup. He has
put a twist on it and, yes, it is warming! Our main is shrimp
curry with coconut basmati rice and Chef Chris’ own twist
to raita. After the heat, there’s carrot halvah on a bed of puff
pastry, a great way to finish off the meal. The best part?
You get the recipes so you can make these delicious dishes at

thinking “How did they do it?” During this interactive class,
Chef Laura will have you doing a lot of the cooking yourself. A
great way to learn! You will make savoury stuffed mushrooms,
melt-in-your-mouth beef braciole, fresh-made pasta with sauce,
garlic bread and salad. And for dessert, a classic caramel
budino (a traditional Italian pudding). $35

Hungarian-Mexican cooking instructor Hendrik Varju will
bring you some very traditional Hungarian comfort food that
you’ll easily be able to duplicate at home. He’ll start off with
an incredible warm bacon potato salad with a vinegar base
— a nice change from creamy potato salad. Then you’ll enjoy
braised red cabbage with the best veal Wiener schnitzel ever.
You’ll get to pound and bread your own schnitzel and fry it
too, so you’ll know exactly how to prepare it at home. Finish
off your evening with a delicious Hungarian poppy seed roll
known as makosh. You’ll see why Hungarians are known as
masters of dessert. $40

Louisiana Cajun/Creole Seafood
It’s Mardi Gras time! The parade, the beads, the amazing jazz
music. For Chef/Culinary Instructor John Bela, Mardi Gras is all
about the amazing Cajun/Creole seafood dishes eaten during
this celebration. Join the chef this evening as he creates a
festive seafood menu that celebrates one of history’s greatest
culinary regions. Your menu begins with hot and spicy
pan-fried bourbon BBQ shrimp and Creole crab cakes with
spicy remoulade sauce. The main dish is Cajun chicken,
sausage and shrimp jambalaya. Dessert can only be fresh
New Orleans-style beignets with the chef’s choice of ice cream.

Warm Comfort Foods (Interactive)
Join our Longo’s Loft team members as they show you some
easy comfort foods that are sure to warm any belly on cold
days. We will start off with a tortilla soup that encompasses all
the things we love about Mexican food. Next we will master
the Italian art of homemade meatballs when we make a
mouth-watering meatball sub with homemade marinara sauce.
A homemade Caesar salad will accompany our subs with
homemade croutons and Caesar dressing. For dessert, simple
but delicious melt-away shortbread cookies. $15

Meals in a Hurry (Interactive)
Being a busy teen you might not have all day to spend in the
kitchen making a healthy, tasty meal. Join our Longo’s Loft
team members as they show you ways to prepare meals that
are quick and sure to fill you up in a hurry. We start you off
slicing with quick quesadillas that are off the hot griddle and
onto your plate in a short few steps. Next we whip up a speedy
stir-fry that makes a perfect springboard for cooking balanced
meals independently. Let’s not forget about dessert as we mix
up a quick and easy giant cookie cake served warm with a
scoop of ice cream. $15

Bite Size Bites
The worse part of cooking is usually the dishes you have to
deal with afterwards. Join our Longo’s Loft team members
as they show you ways to create delicious meals without all
the dishes as we create meals in mugs! We will start with a
delicious cinnamon roll in a mug that you’ll be able to enjoy in
minutes alongside a quiche in a mug for breakfast. For lunch,
who doesn’t love pizza? Don’t have time to make a homemade
pizza, try our pizza in a mug! Lasagnas can take a ton of time
not to mention the mess you make but not with this lasagna in
a mug! Enjoy all the flavours of a lasagna without all the mess.
We will finish off our meal with chocolate cake in a mug. $15

Sun Rising Brunch (Interactive)
Join our Longo’s Loft team members as they show you how
easy it is to create a five star breakfast that will impress your
friends and family. We will start with a quick and easy yogurt
parfait. There’s nothing more classic for brunch than eggs
Benedict. Hot buttered English muffins, Canadian bacon, and
poached eggs topped with a heavenly drizzle of hollandaise
sauce. Brunch wouldn’t be brunch without crispy home fries.
We will finish with a little banana chocolate chip two bite
muffin. $15

The Art of Homemade Pasta (Interactive)
Join our Longo’s Loft team members as you learn how easy
it is to make delicious homemade pasta from scratch. For a
starter we will make pan fried ravioli with a tomato marinara
sauce. For our main course we will crank out some fettuccine
with a creamy Alfredo sauce. Pasta for dessert? You bet! We
will create chocolate spaghetti with a raspberry sauce and
white chocolate garnish. $15

CLASSES
Spend some quality time with your toddler while we combine
the worlds of food and play. Children ages 1 and up can attend
with a parent, grandparent or other loved one. Learn new
