Judging of preserved food classes will be based on guidelines established in the Complete Guide to Home Canning produced by the USDA. This Home Canning Guide may be obtained online at http://www.uga.educ/nchfp/publications/publications.usda.html. 2. The following items are not eligible for entry in Preserved Foods; canned vegetables, mustard, freezer jams or any entry containing meat. 3. Entries must be from different batches. All entries must be home prepared by the exhibitor within one year of the opening date of the Fair. 4. All jars must be STANDARD and SEALED. No paraffin seals. No freezer preserves. A standard jar is a container specifically designed for canning purposes. NOTE: Jars must be sealed with new RUST FREE RINGS. Jar size as specified - no quarter pints. Entries with rust will be disqualified. Jars should not be cooled upside down. 5. Canning Methods: All preserved foods must be processed using one of the canning methods below: Entries without this information will be disqualified. A. Water Bath Method B. Pressure Canner Method C. Steam Canner Method 6. All entries must be labeled securely on bottom of all jars. Label must include: exhibitor’s name, product name, date of preservation, method used/processing time, division and class. Entries without this information will be disqualified. The canning method and processing time may be listed as follow: If the Water Bath Method is used for 35 minutes, list as A/35; or if the Pressure Canner Method is used for 20 minutes, list at B/20. 7. Entry will consist of two jars of each product entered. One jar will be opened for judging, the other will be displayed. 8. Opened jars may be picked up immediately following judging. Due to storage limitations, the Fair will not be responsible for loss, spoilage, etc. if opened jars are not picked up.
