Ingredients:
3/4c canned pumpkin
6 tbsp vegetable oil
2 egg whites
1 egg
1 tbsp light molasses
2 tsp vanilla
1 1/4c all purpose flour
1 c equal spoonful (or 24
packets if you can snag some
from your local coffee shop
or apt lounge)
1/2 c raisins
1 tbsp baking soda
1 tsp cinnamon (or more if
you like, definitely lots of
cinnamon!)
pinch of nutmeg
1/4 tsp salt
Directions:
Preheat oven to 375 degrees.
Combine equal, flour,
raisins, baking soda,
cinnamon, salt and nutmeg.
Stir well. Mix with a hand
held blender the first bunch
of ingredients before equal
(all wet ingredients).
Combine well and then
incorporate dry ingredients
until blended through. Do not
overstir/blend.
Spoon into 12 muffin tins,
sprayed with baking spray.
Cook for about 17-19 minutes
(depending on how hot your
oven is). When tooth pick or
thin knife runs clean its
done!
