I made this Slow Cooker Beef Stroganoff and thoroughly enjoyed it. I froze several containers as one person can eat just so much! Also while looking in the dessert file, I rediscovered this easy but tasty dessert. I hope you try one or both of these recipes and let me know what you think. Ms Dotti SLOW COOKER BEEF STROGANOFF 2 lbs. beef stew meat 1 cup chopped onion 1 can condensed golden mushroom soup 1 can condensed cream of onion soup 1 jar (6 oz.) sliced mushrooms, drained 1/4 tsp. pepper 1 pkg. (8 oz.) cream cheese, cubed 1 container (8 oz.) sour cream 6 cups hot cooked noodles or rice In a 3-1/2 to 4-1/2 quart slow cooker, mix beef, onion, soups, mushrooms and pepper. Cover and cook on low heat 8-10 hours or until beef is very tender. Stir cream cheese into beef mixture until melted. Stir sour cream into beef mixture. Cook until melted and combined. Serve over noodles or rice. Yield: 8 servings JIFFY LEMON DESSERT 16 chocolate covered graham crackers, crushed and divided 1 small package lemon pudding mix (cook, not instant) 1 cup heavy cream, whipped Place half of the crushed crackers in a 9 x 13 inch pan. Prepare pie filling according to directions on package. Cool and pour over cracker crumbs. Spread cream over filling. Sprinkle with remaining crackers. Refrigerate. In keeping with my inaugural remarks, there is a Financial Report in this issue of the newsletter. I will be attending a seminar on how to write grant proposals for senior centers later this month. Cat, Madam President 14 Seniors Often Targeted Seniors are targeted for fraud for several reasons: they are more likely to have a “nest egg,” they are typically more trusting, and they are less likely to report—or realize—they have been scammed. The best protection against scam artists is knowledge. So do your homework and learn what to look for. Tax Scams: Some scam artists set up shop as tax preparers, either online or in person, hoping to gain access to your personal information so they can steal your identity. After you file your taxes, you may get e-mails from crooks claiming to be from the IRS and asking for your bank account details so they can direct-deposit your refund. Their real plan is to steal your money! Or they may ask for more information about your return in an e-mail with an attachment that carries a virus to infect your computer. The IRS will never send an email about your tax return. Credit Card Scams: Legitimate offers to lower your interest rate typically come through the mail, not by e-mail or phone call. Ignore all but the mail offers and vet the one you want to pursue by looking up the bank’s customer-service number on your own and calling to find out if the offer is real. Also be alert to a scam in which thieves impersonate an employee of your bank’s fraud department. The scammers claim they found suspicious charges on your card and need extra information, like your social security number, to protect you. Bank fraud departments really have been stepping up efforts to spot fraudulent charges but if you get a suspicious call that asks for personal information, call the customer service number on the back of your credit card. Debt Relief Scams: If you need help getting out of debt, contact a credit counseling agency. These organizations can provide budgeting help for free and generally charge a small fee if you decide to sign up for a debt management program. Always check out any company with the Better Business Bureau, which keeps track of any complaints. Job Search Scams: Now that the holiday season is over, it’s not unusual for people to look for new jobs and that’s why this type of scam is more prevalent at this time of year. Some offer work-athome opportunities that ask for a big up-front fee to get you started. Others gather information from resumes posted online and call and pose as a prospective employer, asking for your social security number and other personal information so they can do a background check. Instead, they use this information to steal your identity!
