What You Can Expect in an
Audit

A physical and desktop audit of all food
areas and Food Safety Program
documentation.

An opening meeting at the beginning of
the audit will outline exactly what we will
be doing at what time through the audit
Estimated time for food safety audit is
dependent on the size of the
facility’s operations and standards being
maintained. For example a 100-bed
cook-fresh facility might take 4-5 hours to
audit
A closing meeting at the end of the audit
process will highlight all positive
aspects of the food safety systems
implemented together with the areas of
opportunity
for
improvement
for
regulatory compliance
Your facility will receive the results of the
audit and the NSW Food Authority Rating
at the end of the audit process on the same
day on completion of your audit.
A completed written report will be
submitted within 48 hours of the audit. All
reports are written in a uniformed format
required by the NSW Food Authority.

Our Training Program
Food Safety Audit delivers Food Safety
Training through a Registered Training
Organisation (91230), known as Centre for
Training NSW. This training is nationally
accredited. Giselle has completed Certificate
1V Training and Assessment TAE40110 and
a Graduate Diploma in Food Science and
Technology from the University of NSW.
This is a Basic Food Handlers’ course
developed for all food service staff involved in
every aspect of the food production line from
product receival, storage, preparation,
processing and to food presentation. This
course meets the minimum requirements for
all food handling staff according to Australian
Standard 3.2.2.
Allergen Awareness Course
This course focuses on raising awareness of
food allergen for individuals working the food
industry. It covers case studies and strategies
for controlling and managing risks of common
food allergens like eggs, peanut, tree nut,
sesame, cow’s milk, soy wheat, fish and
crustaceans.

Course
This course is designed to train food handlers
in their understanding of NSW food safety
legislation and familiarise themselves with
their role and responsibilities under a Food
Safety Program. This course will impart basic
skills and knowledge required to implement
food safety procedures in your food
production business

Giselle Brand is an experienced food
safety auditor with over 15 years’
experience working in the food industry.
Upon completing her Masters of Nutrition
and Dietetics Degree at the University of
Sydney in 1995, Giselle joined the food
industry and worked in the capacity of a
food scientist for Mars Inc. Her role
included
analysis
of
nutritional
composition
of
foods,
product
Giselle has extensive knowledge of many
aspects of human nutrition and regularly
provides
training
to
healthcare
professionals like doctors (Australian
Medical Association), nurses (Royal
College of Nursing Australia), carers and
chefs on nutritional medicine related
topics particularly for the vulnerable
population specifically in the aged care
setting.
