DDW Colouring Foods: Walnut Brown
DDW’s innovative Colouring Foods Walnut Brown*
is a unique water soluble liquid blend of anthocyanins and burnt sugar. With a colour intensity
of 0.080, this product provides a rounded, chocolate-like colour as opposed to burnt sugar tan, with
richer red hues and greater depth of colour. This
product is versatile and is suitable for use in a wide
range of applications such as, Milk, Ice Cream, Iced
Tea, Boiled Sweets, Panned Candy, Cakes/Biscuits,
Breads and Scones. This is an E-Number free
solution.

Heat: Medium - It will fade the anthocyanins, but not
as much as the anthocyanins without the burnt sugar
pH Range: Good - 3.0-7.0, not stable below pH 3

upon light exposure

colouring should be labelled as “Colour: Plain Caramel, Anthocyanins” or “Colour: E 150a, Anthocyanins”. According to the definition of 'food additive' in Article 3 (2) (a) and the term
"colours" in Annex I of Regulation (EC) No 1333/2008, foods normally consumed as such or normally used as characteristic ingredients of food should not be considered as food additives. Foods normally consumed as such in the EU e.g. Anthocyanin extract has colouring properties. Such foods would be regarded as ingredients and would have to be labelled
as such, even when added principally for colouring purposes.
