canfindit)Use2forsegments,1forjuicing
DRESSING
2/3cjuiceofanorange
2Tlimejuice
2tbalsamicvinegar
2/3cOliveoil
salt,pepper
INSTRUCTIONS
1.Prepallyourvegetablesasnotedabove.Usingamandolin,shavethesprouts,theonionand
celery.Useaboxgraterfortheradishesandcarrot.Ifyoudon'thave,ordon'tfeelcomfortable
withamandolinthensimplythinlyslicethevegetables.
2.Placeallthecutvegetablesinalargeservingbowlandsetasideasyoupreparethedressing.
3.Segmenttheorange.Cutthemoverabowlsoyoucancatchanyofthejuicesthatmaydrip
down.Squeezewhateverjuiceyoucangetoutofthepulp.
4.Whisktogetheralltheremainingingredientsandpouroverthesalad,tossingthoroughly.
Thissaladisbestwhenitisdressedatleast15-20minutespriortoserving.
5.Arrangetheorangesegmentsontopofthesalad.
