Boxty (Irish Potato Pancakes) with Bangers in a
Guinness Mushroom and Onion Gravy
Ingredients:
Bangers:
1 lb. sausage
1 tbsp. oil
1 large onion, sliced
8 oz. mushrooms, sliced
1 clove garlic, chopped
1 tsp. thyme, chopped
2 tbsp. flour
1 (12oz.) bottle Guinness
1 tbsp. Dijon mustard
1 tbsp. Worcestershire sauce
1 tbsp. brown sugar
Boxty:
1 cup potato, grated
1 cup mashed potatoes
1 cup flour
1 cup milk
Salt and pepper to taste
Butter or oil for frying

This Day in History: March 15, 1783 General George Washington puts an end to the Newburgh Conspiracy
General Washington makes a surprise appearance at an assembly of army officers in Newburgh, NY, to calm
the growing frustration and distrust growing towards Congress for failing to pay them and settle accounts for
repayment of food and clothing. Officers began circulating an anonymous letter condemning Congress and
calling for a revolt.
When word of the letter and its call for an unsanctioned meeting of officers reached him, Washington issued
an order forbidding any unsanctioned meetings and called for a general assembly of officers for March 15.
Washington began his speech at the meeting, “Gentlemen: By an anonymous summons, an attempt has been
made to convene you together; how inconsistent with the rules of propriety! How unmilitary! And how
subversive of all order and discipline…” When Washington finished with his speech, the assembled officers
realized that Washington had given as much or more in service to the new nation as any of them and voted
unanimously to express confidence in the Congress and their country.

St. Patrick’s Day Soup

Directions:

Bangers
Heat the oil in a pan over medium high heat.
Add sausage and cook until golden brown, about 2-4 min.
per side, and set them aside, slicing them as desired.
Add onions and mushrooms and sauté until tender, about
5-7 min.
Add garlic and thyme and sauté until fragrant, about 1 min.
Sprinkle in the flour and let it cook for about 1 min.
Add the Guinness, mustard, Worcestershire sauce and
brown sugar along with the sausage and simmer for 10 min.
Boxty
Mix grated potatoes, mashed potatoes, flour and enough
milk to make a nice thick pancake like batter.
Heat the butter in a pan over medium heat, add the batter
and cook until golden brown on both sides, about 4 min. per
side.
Optional: Add shredded cheese or chopped herbs to the
pancakes and top with a fried egg!
