Uhu (Parrot Fish)
Also known as Uhu, feed in shallow water on the reefs. They are well-known
for their brilliant colors' especially the Blue Parrot Fish. They yield a tender
white fillet that is delicious saut'ed with lemon butter and capers. Uhu can also
be breaded and fried.
