Christmas Biscuit Recipe
Ingredients:

250g Plain Flour

200g Butter

100g Icing Sugar

2 egg-yolks

Icing = 100g Icing Sugar plus a tablespoon of water
Methods:
1. Preheat the oven to 170C/325F/Gas 3.
2. Place the flour, butter, icing sugar and salt into a bowl. Using your
fingertips, rub the ingredients together until the mixture resembles
breadcrumbs.
3. Add the egg yolks and mix until a dough forms.
4. Turn out onto a lightly floured work surface and roll out to a thickness
of about 0.5cm/¼in. Cut out shapes using a 4cm/1½in cutter.
5. Bake the sables for 10-12 minutes, or until light golden-brown and
crisp. Remove and transfer to a wire rack to cool.
6. Count the number of biscuits you have made, this will depend on which
size cutter you are using
Step by Step Guide to Carbohydrate Counting Recipes:
1. Identify the ingredients that contain carbohydrate. In this recipe, only the
flour and sugar contain carbohydrate
2. Use the labels to identify how much carbohydrate is in 100g of each
carbohydrate containing ingredient, as shown in the pictures
Icing Sugar = 99.5g carbohydrate per 100g
Plain Flour = 77.7g carbohydrate per 100g
3. Work out how much carbohydrate is in 1g of each ingredient by dividing the
carbohydrate per 100g by 100. For example, the flour has (77.7÷100) = 0.77g
carbohydrate per 1g
4. Multiple this by the weight of the ingredient in the recipe, for example in
250g flour, there is (0.77 x 250) = 192g carbohydrate
5. Repeat this process for each ingredient containing carbohydrate (see the
table below)
6. Add up the total carbohydrate in the whole recipe
7. Count the number of biscuits you make and divide the total carbohydrate by
the number of biscuits, in this example 40 biscuits were made
