Gumbo Cook-Off Rules & Guidelines
Cooking Rules/Regulations:
1.
Gumbo must be cooked on site the day of event.
•
You may use pre-prepared roux, jar roux, chicken stock, etc.
2. No open fires (Propane may be used).
3. No selling of gumbo to the public.
4. One pot of gumbo per entry- Entries includes chicken & sausage, seafood, & wild game.
5. Provide enough gumbo for the public to sample: (minimum)
•
Chicken & Sausage- 10 Gallons (40 quarts)
•
Seafood- 5 Gallons (20 quarts)
•
Wild Game- 5 Gallons (20 quarts)
6. Each team must provide cooking-stove (propane), cooking supplies, tables and chairs.
•
You will also need to provide your own tent.
7. Spoons, bowls, and rice will be provided, as well as trash boxes with liners
8. Water and electricity will NOT be provided or be accessible. Bring your own water if needed.
9. Each team is responsible for keeping their area clean. Please use the provided trash boxes.
10. Be sure to clean your area once the event is over. Large tents may be picked up the next day.
11. Leftovers will be the responsibility of the participating teams. Please bring your own storage
containers or dispose of anything in the trash boxes provided.
12. Each team will have an assigned 10x10 space.
13. Teams may start at 6:00am on cooking day and begin cooking immediately.
14. Containers will be given to you for the judging of gumbo. Please Do Not mark on them.
Judging/Awards:
1.
Judging of the gumbo will begin at 11:00am.
2. Judging will be blind. Each team will be provided containers for their gumbo and a time to deliver
gumbo to judging area. Gumbo must be delivered on time or may not be judged at all.
3. Judging will be based on aroma, appearance, consistency and taste.

4. Awards will be presented to 1 , 2
rd
& 3 place for each of the 3 gumbo categories.
5. A People’s Choice Award (made by the public) will be given.
6. A Spirit Award will be given for the most spirited team, decorated area and apparel.
7. Awards will be announced at 4:30pm.

Vendor Rules/Regulations:
1.
Each vendor booth will be given an assigned 10x10 space.
2. Trash boxes and liners will be provided.
3. Water and electricity will NOT be provided or be accessible. Bring your own water if needed.
4. Vendors are responsible for their own handling of money.
5. Vendors are responsible for keeping their area clean. Please use the provided trash boxes to
dispose of items. Be sure to clean your area once the event is over.
General Info:
1.
Entry fee for Cooking Team or Vendor Booth is $100.00.
2. Gumbo Cook-Off has 3 categories of entry: chicken & sausage, wild game, and seafood. First
entry fee is $100.00 and $25.00 for any additional entry (up to 3 entries-1 per category).
3. All entry fees of $100.00 (Vendor Booth or Gumbo Entry) must be paid in full by Friday, March

19 in order to participate in the Cook-Off Event on Saturday, March 21 , 2015.
4. Your entry fee entitles you and one other person free admission for your cooking team or vendor
booth. Your 2 wristbands (unless a sponsor) for your cooking team or vendor booth will be given
to you the morning of the event in your packet when you check in.
5. Sponsor wristbands will be given out prior to the event, if not participating in Cook-Off
6. Tickets can be purchased in advance at the Community Home Health & Hospice office.
7. Tickets are $10.00 each the day of the event. Children 12 and Under are FREE.
8. The event is held at Sugar Mill Pond in Youngsville, La.
9. NO ice chest with beer or alcohol can be brought inside area. Alcoholic and non-alcoholic beverages
will be available for purchase day of event.
10. Please Do Not hand out any type of drinks to the general public as a means of advertisement
(Unless authorized). Let’s remember this is a fundraising event and we will have drinks for sale.
11. Gumbo TASTING for the public will begin at 11:00am.
