Can I get one of those? That one that she has? Well, we don’t much like to follow trends at Up, so this year we aim to change our cocktail menu continuously. Every season exploring old and newfound ingredients to create with.. This being our first menu of the year, we have dabbled in some mild spices, smoke, and some other luxurious combinations, all with the heart to suit a Brisbane summer. Everyone in the team had a part to play in creating the menu and we are all proud to have produced a solid start to our first year together. All our descriptions are equivocal for a reason. Get a drink, get a seat, get fabulous. VIOLET ROSE // 17 Ketel One Citroen turns a stormy shade of purple, with grabbing freshness and uplifting aromas. Sweet and Sour balanced for utter drinkability. Up’s House Cocktail. ENGLISH COUNTRY ROAD // 18 Traditional English flavours shaken together with nods to Tanquery Gin and JJ Whitley Rhubarb Vodka. Follow your nose down an English country road and ruffle off the dust with this ‘Jamfastic’ martini. SMOKEY WALKER & THE BIG RUSTY APPLE // 18 This sipping adventure is rather moreish. Johnny Walker Double Black and Melbourne Moonshine Apple Pie create a twist on the already twisted “Nailed in Manhattan”, “A Rusty Nail” and “Manhattan” combined. Definitely worth a swallow. JAPANESE BEACH PARTY // 18 Honey soaked Beach House Spiced Rum from Mauritius meets Jinzu Gin for a beach party in Japan. Lychee and the tingling sensations of lemon, mingle for a spicy, sweet cocktail sensation. PEAT AT A PICNIC // The peat-bog whisky monster, Ardbeg 10yr, is slammed into the picnic hamper and forcibly crushes the blackcurrants and apples into a very-very-tasty-yum-yum and an amazing quince-like colour. A wonderful combination for lovers of malt and for the beginners. This creation brings out just enough smoke to entice those virgin whisky drinkers. . 18 IN SEARCH OF JUNIPER // 18 Two gorgeous Australian gins bursting with enthusiasm create a bold, bright and strong flavoured cocktail. Tasmanian gin Brocken Spectre “Summer Gin” infused with Tasmanian grown Saffron, itself, a highly unique experience. Swizzled together with Four Pillars “Navy Strength” gin and our house-made smoked ginger syrup create a belter for those hot summer days and muggy nights. SUNBURNT MEXICAN // 18 Don Julio is king in this savoury super star. Spiced with Jalapeno and soothed with Aloe Vera liqueur, this cracker is as fresh and as cooling as a summer storm after a scorching hot day in Cancun. Topped with Salty Dog and a smidge of rock salt, quenched is how your thirst will feel. BLOOD SMOKED SUNSET // 18 Easy rider, Pampero Blanco rum freewheels on the back of a smoked ginger syrup and blood orange liqueur. The colour of a burnt sky as the sun fades deep into the smoky horizon. Ooh. Romantic. WHITE LOTUS // Jinzu Gin returns paired with the crowds favourite Australian sparkling,Chandon. A little lychee added for a mild pink tinge and a little sweetness. A whole lychee too, in case you get hungry. Can’t decide? Come see our ever-evolving bar team and we’ll make you an original cocktail, a one off just for you, or a classy, classic if you prefer. We are limited only by our minds….and whatever the bar manager has ordered this week. Could be plums, could be a camel. WHITE REGION GLS BTL TOMFOOLERY SAVIGNON BLANC // ADELAIDE HILLS, AUS 12 53 12 50 12 53 11 48 The Tomfoolery winemaking philosophy is simple: Small parcels of fruit, hand-crafted through a simple approach with the aim to truly reflect the individual characteristics of the vineyard and variety. This particular Sauvignon Blanc has zippy lime and gooseberry, intense minerality on a fresh, light palate all tied together with a crisp natural acidity on a clean, lingering finish. VOYAGER CHARDONNAY // MARGARET RIVER, AUS Vibrant flavours of citrus fruit, dried pears and some riper tropical notes. CLOUDY BAY SAUVIGNON BLANC // MARLBOROUGH, NZ A favourite among many of us with its vibrant intensity. The characteristically uplifting aromas of kaffir lime, lemon zest and nectarine, with the floral notes of orange blossomon the nose. Crisp, clean and refreshing. 60 ROSE REGION GLS BTL LA VIE EN ROSE // FRANCE 13 55 11 50 11 50 Vibrant and pure, wild strawberries, Provençal herbs and mineral elements lend this wine plenty of freshness with a smooth luxurious texture and a lingering savory finish. RED KALLESKE GSM // BAROSSA VALLEY, AUS “Best value dry red” at the International Wine Competition. The aromatics are amazing. There is a captivating display of vivid plum, rose florals, candy, spice and blackberry. Intense pure fruit is the drive of this wine. GOLDEN GOOSE PINOT NOIR (Organic) // WAIRARAPA, NZ From Wairarapa in New Zealand this Pinot Noir is light, red berry smells of cherries and strawberry. It is certified organic so you can feel happy that you are saving the planet. TERRAZEZ MALBEC // MENDOZA, ARG 60 Intense purplish colour with red shades. Very expressive, revealing a floral and red fruit profile of violet, raspberry and cherry, with marked aromas of toasted coffee and chocolate. Characterised by a broad and sweet mouthfeel, delicate tannins add finesse to this great Malbec. NASHWAUK CABERNET SAUVIGNON // MCLAREN VALE, AUS 55 Bold & Rich, like being surrounded by leather books and smoking a Cuban cigar on a leather chesterfield sofa. MOPPA SHIRAZ // BAROSSA VALLEY, AUS It is profoundly lifted and alluring with aromatics of dark berries, fresh flowers, mocha, sage and a hint of white pepper. The full-bodied palate is rich and flavoursome. 60 We all love beer. Even the people who don’t like beer like beer because we say so. There are so many new weird and wonderful beers and ciders hitting Australia nowadays; it’s remarkably difficult NOT to find a beer you will eventually like... We are always on the hunt for new and exciting beers from across Australia and farther afield. We have set out nice and slowly having Sam Adams as our introductory beer, a well-established Boston Lager with heaps of taste and flavour. If you make or know any really awesome beers/ breweries then definitely give us some info. We are out to capture the best of best, the best of the unusual and the outright wild and wonderful so share with us your knowledge and let us pass it on. Beer is liquid gold, but there’s a story often told, you drink too much, you lose your touch and end up in the cold.
