Real Pickles – Greenfield, MA

Producing pickled products that are 100% organic and rich in probiotics, Real
Pickles is a worker-owned co-op. They create raw, vinegar free products using
the traditional, natural fermentation process. They buy all of their vegetables
from family farms in the Northeast, which is the only place their products are for
sale. Their goal is to ensure that the company stays small, independent, and
locally-owned. Their products range from an assortment of pickles to beets, and
each is more delicious than the next. In honor of Cinco de Mayo, try Real Pickles
tomatillo hot sauce to spice up any Mexican style dish.

Cinco de Mayo
Cinco de Mayo, the 5th of May,
commemorates the Mexican victory over France at the Battle of
Puebla during the Franco-Mexican
War from 1861-1867. The victory
represented a significant morale
boost for the Mexican army and the
Mexican people as a whole. It is a
common misconception that Cinco
de Mayo is Mexican Independence
Day.
While the holiday is barely celebrated in Mexico, it has become a
massive celebration of Mexican
culture and cuisine in the United
States, specifically in areas with
large Mexican populations. Cinco
de Mayo traditions include parades,
live music, and street fairs, all in
Mexican styles. There is a special
emphasis on Mexican products
during Cinco de Mayo, specifically
alcoholic beverage companies that
represent celebration.
The victory of Cinco de Mayo is
not considered a national holiday
anywhere in Mexico except for
the state of Puebla. While it is a
proud achievement of the country,
it is less celebrated there than in
the United States. This year enjoy

For over thirty years South River Miso
has been making hand crafted, wood
fired, certified organic miso in Japanese
farmhouse tradition. Miso is a high-protein
seasoning found in Japanese culture
and cuisine. Most commonly made of
soybeans, cultured grain, and sea salt, it is
a delicious seasoning for an assortment of
dishes. It is believed that miso is a great medicine that can prevent disease and illness and can
strengthen the body.
Trimona Bulgarian Yogurt
– Port Jefferson, NY
Atanas Valev, Trimona Yogurt founder, was
born in Bulgaria and is passionate about yogurt.
Bulgarian yogurt is different from Greek yogurt
in that it is not strained and therefore contains
the healthy whey in the final product. They
create a moderately thick yogurt by using strains
of bacteria, such as Lactobacillus bulgaricus, which is essential to the yogurt making process.
Trimona Yogurt is made with organic whole milk from grass-fed cows, containing five times more
conjugated linoleic acid (CLA) than cows that are fed with corn and grain. Trimona Yogurt is
gluten free and only contains natural sugars.

Tumeric can be considered The Elixer of Life and is meant for anyone
who is looking to live better, work harder, and feel stronger. Their
products combine age-old turmeric remedies with vibrant cold-pressed

their ingredients from farms local to their New York manufacturing facility.

Enchiladas Verdes in a Tomatillo Sauce
Serves: 6 to 8
Ingredients:
Sauce: Real Pickles Tomatillo hot sauce
For the enchiladas:

2 cups shredded cooked chicken
Oil for frying the tortillas
12 corn tortillas
1/2 cup Mexican style cream, Can substitute for heavy cream
1/2 cup crumbled queso fresco, farmers cheese, cotija or mild feta
1/3 cup white onion, chopped, for garnish
Directions:
Place the tomatillo sauce in a sauce pan, let it simmer over medium heat for
about 6 minutes. Taste for salt and add more if need be. In a large saute pan
over medium heat, add enough oil to have about 1/2 inch depth. Let it heat about 3 minutes. Gently “pass each tortilla through the
oil,” one by one, for about 15 seconds on each side, they will soften and become resilient. You should be able to fold them without
breaking them. Transfer them to a paper towel covered plate.
Preheat the oven to 375 degrees. Place about 2 to 3 tablespoons chicken inside of each tortilla and roll them up. Place them, seam
side down on a baking dish. Cover, generously, with the green sauce. Place them in the oven for 10 to 15 minutes. Remove them
from the oven, sprinkle with the crumbled cheese, the cream, and the chopped onion. Coat with Real Pickles tomato hot sauce.
They are very satisfying with a side of rice and/or beans, as well as with a light green salad. Eat the enchiladas while they are hot.
