cream cheese by stirring in
fresh cherries. Spread this
on your morning bagel or
sandwich it between graham
crackers for a cherry
cheesecake-inspired snack.
1/2 cup reduced-fat cream
cheese
1/4 cup chopped, pitted
fresh cherries or
thawed, drained frozen
cherries
1 ½ teaspoons
confectioner’s sugar
1 pinch ground allspice
Combine cream cheese,
cherries, sugar and allspice.
The potato is the most important non-cereal
crop for feeding the world, ranking behind corn,
wheat and rice. The starchy vegetable is about
80 percent water and grows best in a long, cool
season. Here are some other potato facts:
After dairy products, potatoes are the second most consumed food
in all of the United States.
The average American eats just under 140 pounds of potatoes every
year – more than 50 pounds fresh, 55 pounds frozen, 2 pounds
canned, 13 pounds dehydrated and almost 17 pounds of potato
chips.
In 1995, potato plants were taken into space aboard the space
shuttle Columbia. This marked the first time any food was ever
grown in space.
Did you know that most
households in the
United States have at
least one pet?
Approximately 39% of
US households own at
least one dog, and 33%
own at least one cat.
Idaho, Washington, Oregon, Colorado and Maine lead the U.S.
potato production.
Three Surprising Uses for Potatoes
How can American Heart Month
make a difference?
Here are just a few ideas:
• Encourage families to make small changes, like using
spices to season their food instead of salt.
• Motivate teachers and administrators to make physical
activity a part of the school day. This can help
students start good habits early.
• Ask doctors and nurses to be leaders in their
communities by speaking out about ways to
prevent heart disease.
1. Eye soother. Similar to the way many people use cucumber slices, you
can use raw potato slices to ease eye puffiness and discomfort. Simply lie
down for about 10 minutes with raw potato slices on your closed eyelids for
quick relief.
2. Cut down on salty flavor. If you have added too much salt to your soup
or stew, add a few raw potatoes and let the pot simmer for about 10
minutes. The potatoes will absorb the salt.
3. Remove food stains from your hands. Those unsightly stains you can get
on your hands from peeling carrots or carving a pumpkin come right off
when you rub your hands with the open side of a cut potato.
