Introduction
Units and coefficients are required for each product to successfully track, order and supply stock to
defined locations and provide precise information for recipes within Menumark.
The Unit value is used to provide Dietplan6 with detailed recipe information. Nutritional information
can then be extracted from Dietplan application once data has been imported. This can be used by
nutritionists to determine if a meal provides all dietary requirements.
The data that is provided by Dietplan6 will only be as accurate as the information that is entered into
the Backoffice.
With this in mind it is critical that a user understands the technique of adding and manipulating units
for products and recipes, and to appreciate the various procedures that can be employed to do this.

Note – Both Imperial and metric measurements are provided. An operator can choose their and utilise
their preference.

Examining ‘the correct unit of measure’.
Example - Coke a Cola
A user is asked to consider the best unit to be defined for a particular product. The examples below
are created using the ‘Edit product’ method.
All the elements for the product will be, for the sake of this exercise, assumed to have been inputted
and correct.

specify single units (Each) and multiples (Pack)

 Each Can of Coke is defined as an individual
Therefore 24x1=a tray of coke.

All other measurements can be disabled

Therefore the size should reflect this.
 A description can be added using free
text.
 Double click the item and amend the
size.
Click OK to commit.

This will be designated as the individual
item, the selling item or the smallest
amount to be used in a recipe.

The Order unit needs to be defined.
Click on ‘Add Unit’

Again enter a description.
In this instance Coke is delivered on trays
with 24 cans.
So the description could be ‘24x330ml Tray’

Define the Size of the Tray
The measurement is in ml.
We need to know how many ml will be
delivered per tray.
 24x330=7920
Enter this value into the Size

Note the Comparison calculator.
This is used to verify the amounts are
correct. Our example states…
1 Tray = 24 cans of coke, and visa versa
The Units for the can of coke have now been defined using millilitres as our unit of measure.
1 can of coke = 330ml
1 tray of coke = 7920ml (aka 24 x 330ml)
Adding Measurements Manually
We are going to recreate the units from the step above but use a different method to complete this.
Again all elements for the product shall be assumed to have been entered and be correct.

Weights
Adding weighted items allows the loading of both metric (kg and mg) and Imperial (lbs and oz). This
section will concentrate on the metric method.
For our example we will use Flour

NOTE – the comparison Calculator will
show some incorrect data at this point.

Any of the elements concerning our product
can be edited to achieve the correct values.
In this case we know that 1 sack of flour is
the same as 25 kg of flour.
If these values are amended in the
Comparison Calculator the size of our
product will be amended.
The configuration of this weighted item
provides the ability to order a sack, or
sacks, of flour as well as using as little as
1mg in a recipe.
Although 1gm may be more appropriate.

Setting a Base Unit
There is a function within the Unit tab that allows a base unit to be defined and set. The defined unit
will be applied to all the active units within the tab.
Once all the units have been created and configured a base unit can be defined for the product.

Creating a Recipe
Once all products have been created and unit’s configured they can be added to recipes. A user
again has to consider some factors before they continue.


What products are required for the recipe?
How many portions will the ingredients make?
For example.
A crumble topping is made from Flour, Butter and Sugar. These are designated as the ingredients.
Ingredients are added to a recipe in the quantity that will create a predetermined quantity.
NOTE – This process is a manual task. Products will have to be measured to find the allotted quantity
for the portions defined.
With this in mind the following instruction can be followed to create a recipe item.
All the elements for the recipe will be, for the sake of this exercise, assumed to have been inputted
and correct, including a portion unit size.

To add a product / ingredient select the Add
Ingredient button
This will show the Product look up screen.
The filter can be used to search for an
ingredient.
Select the ingredient by double clicking it.

The product will be added to the recipe. A
default ingredient unit will be added. This
can be amended.
The ingredient unit can be changed by
using the drop down.

The Quantity of the item needs to be
added. In this case 5 KG has been
selected.
Using the same method add the Butter and
Sugar using the correct ingredient unit and
with the correct quantities
The portion size is now required to be set.
The statement ‘These Ingredients make’
needs to be completed.
Once the portions have been worked out
the costing will be auto configured
NOTE – Sometimes there is a requirement to save and exit the recipe and renter the screen to see
the amendment.
Troubleshooting

If Total cost and Unit cost is not populated

Add a large quantity to an ingredient. This will make the
total cost and unit price hugely incorrect but will prompt the
values to be added into the total and unit cost. Once the
data is seen correct the quantities which will correct the
Total and unit cost price.
No Weight/Volume Unit has been selected in the Unit tab.

Weight/Volume Unit drop down.
Exit the recipe. Re-enter the recipe. Select the Unit tab. The
Weight/Volume Unit is now selectable.
