What about Whitefish?
Whitefish is the most popular fish in the world—but it’s actually not a fish at all.
In fact, whitefish is a general term for a variety of fish distinguished by their lean,
flaky, mild, white flesh. We offer three types of whitefish—pollock, haddock, and
cod—in a mix of products that deliver a broad range of value and versatility. From

Cod
Species: Gadus morhua (Atlantic Cod) and Gadus macrocephalus (Pacific Cod)
For the average consumer, the differences between Atlantic and Pacific cod are slight.
Both are fished in chilly, northern waters. Pacific cod contains a bit more moisture
than Atlantic cod, and some claim it is also softer.
Eating Qualities
Cod’s white meat is lean and flaky, with a mild taste, and turns opaque when cooked.

haddock
Species: Melanogrammus aeglefinus
Haddock, harvested from the North Atlantic, belongs to the same family as cod. Some
individuals say haddock is better-tasting than cod since it is sweeter and milder.
Eating Qualities
Haddock has a sweet, mild flavor. It is lean and has a somewhat firm texture with
some flake. Some flesh of haddock is darker in color.

pollock
Species: Theragra chalcogramma
Pollock is often used as an economical replacement for cod or haddock. A bottom
fish (or groundfish), is used as loins, fillets, fish block, and surimi.
Eating Qualities
With a delicate and mild flavor, the flesh of pollock is snowy white and flakes easily
when cooked.

Factors Affecting Whitefish Species Tiering
Our cod, haddock, and pollock is laid out below to represent the tiering based on species cut, chemical additives, and number of times frozen.
For cuts, we start with the premium product, the loin, and move to cellos, fillets, and tails. For species,
we start with the highest tier of cod, and move down to haddock and then pollock.
The presence (or lack thereof ) of STP (sodium triphosphate) also affects the cost of the fish.
STP is added as a preservative during processing.
Once-frozen fish vs. twice-frozen fish.
Fish that is frozen shortly after it is caught and kept at that state is considered once-frozen. Fish that is
twice-frozen is frozen shortly after it is caught, then thawed for further processing and frozen again.
