technology, Nitro Coffee and Tea.
How it’s made:
Cold-brew coffee infused with nitrogen gas is released through a
pressurized valve with tiny holes. As high pressure forces the cold brew
past a disc, it creates a creamy, stout-like effect
How it’s served:
Straight from the tap and not over ice, which brings the Guinness
effect.
Looking for something more traditional? We can make you a
handcrafted drink with our Espresso, our own custom blend.
We always have fresh brewed coffee hot and ready. Our house
blend is Colombian Supremo. We also offer a different Flavor
and Source roast every day. So check out our FaceBook page
to see what we have brewing. If you enjoyed what you had,
you can take some home with you. All of our coffee is hand
roasted right next door, made in small batches to ensure
freshness. We offer 1/2 pound bags of whole bean coffee in a
large variety. We would be happy to grind for you to suit your
needs.
How to keep your coffee tasting it’s best.
Avoid these things!
1. Direct Sunlight
Light has the most significant effect on coffee directly after
roasting. Direct light actually causes roasted coffee beans to
go stale. It's extremely important to store coffee beans in dark
areas or in opaque containers (not in clear containers!) so that
the coffee does not spoil.
2. Moisture
Humidity plays a large role in the overall state of a roasted
coffee bean. When a roasted bean is exposed to moisture, the
beans can go bad almost instantly. That’s why it’s crucial to
store roasted coffee beans in a dry, dark place. Also keep in
mind that refrigerating or freezing coffee beans may not be a
good idea after all. Drastic changes in temperature can cause
condensation to form on the roasted beans. This exposure to
moisture can, once again, make the beans go bad!
3. Oxygen
Perhaps the biggest coffee killer of all is oxygen. When
roasted beans are exposed to air, they can go bad in just a
matter of days. If you’re one who likes to buy coffee beans in
bulk, be sure to store them in an air-tight, cool dark place.
When roasted coffee beans oxidize, our favorite cup o’ Joe
will taste stale.
4. Heat
The fourth biggest killer of coffee is, believe it or not, heat.
Roasted coffee beans should be kept away from heat until they
are ground and ready to be brewed. Exposure to heat
before brewing can cause coffee beans to lose flavor. Coffee is
just another food product that requires cool storage for
freshness!

Modoc the Most
Famous Elephant in
America!
On November 11, 1942, The Great American Circus prepared itself to
stage an Armistice Day fundraiser for the sixth year at Wabash High
School. No one present could possibly predict the whacky and
legendary events about to unfold that afternoon and the days ahead.
Lyman Keyes, circus owner, proclaimed this would be his last event in
Wabash until the end WWII because so many of the circus hands were
heading off to war. Great America’s special animal act featured three
gray Indian elephants Judy, Empress, and Modoc who stood tethered
outside the school gym awaiting their chances to perform, when
suddenly a group of barking dogs ran though there feet. Scaring them
so much causing them to Break Free! While Empress and Judy
meandered to nearby neighborhoods, the twelve Year old 1900 lb.
Modoc barn stormed!
Modoc charged to downtown Wabash where her long snout picked up
the scent of peanuts roasting in Bradley Brothers Drugstore (the same
spot Modoc’s Market is today). She chased Chauncey Kessler, who
wore a long muskrat coat, through the 42 inch door on Miami St. and
using her long trunk rolled Mrs. Kessler onto the floor, all the while
flabbergasting pharmacy clerk Helen Myers into sheer fright behind the
soda fountain. Modoc knocked over the peanut roaster and inhaled her
fill of the little shelled delicacies. Then bidding adieu, she smashed
through the back door frame, onto Market Street. She crossed to Union
Cigar Store (Market Street Grill) to poke in, but apparently not whiffing
her brand she moved on.
Modoc was on the rampage for the next 5 days. Headlines spanned the
Wabash Plain Dealer and large and small city newspapers around the
country while Modoc crisscrossed the Wabash River 5 times. Running
wild from farm to farm she eventually end up in Huntington County.
Worried circus workers, angry farmers, Wabash and Huntington
sheriffs, state police, and even Governor Henry F. Shricker joined the
chase to see what could be done to capture the storming pachyderm.
After a mix of bungled strategies, a black, six foot seven inch Carolina
circus trainer. “Corona” Ezra Smith finally lured Modoc into her trailer
chanting “Mumbo Jumbo” his elephant’s name and dispensing twentysix loaves of bread like doggie treats. Relieved owner, Terrell Jacobs,
treated Modoc’s frazzled nerves and ”nose” cold she caught with
Medicine (six quarts of whiskey) Modoc chased down the remedy with
thirty gal of water and ate all night long, helping to gain back a smidgen
of the 800 lb. she lost. Keyes later said “Modoc is content and glad to be
back with the other girls. It’s nice to see her becoming a nice fat girl
again”
The Great American Circus never returned to Wabash again, but the
memory of it specially featured elephant lives on at Modoc’s Market.
This is the true story of how Modoc became the most famous elephant
in America for one week in 1942!
