Marinating & Grilling

The season is here for sizzling grilled entrees full of
intense, smoky flavor. Grilling meats, vegetables
and select starches is a great way to keep your menu
seasonal and fresh. When choosing items for the
grill, make sure they are able to withstand the intense
heat. It’s also important that the flavor profile is not
compromised by the grilling process. Very light meats
may be overpowered by the intense heat and grilling.
Maplevale Farms is proud to introduce our new “InHouse” Fresh Cut Steak Program, featuring upper end
line of Chairman’s Reserve with Premium Choice Cuts.
We also offer a full line of fresh seafood. You have the
opportunity to order the freshest ingredients and expand
the variety of offerings on your menu. During the
summer, change your dinner features every other day
to keep it fresh and to keep your customers interested.
Advertise different sized medallions of grilled protein
matched with a petite portion of fresh seafood to jazz
up your menu board. Change the starch, vegetable and
sauce to complement each dish. Promote the pairing
as New to draw attention and increase sales. Enjoy, be

Helpful Grilling Hints
Inspect vents and gas valves to make sure that ashes
from previous use are not clogging them. If you would
like to try some flavored hardwoods, they can be a great
source for additional flavors. They should complement,
not overpower the food you are preparing. Soak
hardwoods in water for 30 minutes before using. When
placed in your grill, they should smolder and smoke
but not burn. Grapevine cuttings give great flavor as do
shells from nuts such as almonds, and pecans. Certain
types of tea give off a nice sweet smoke when grilling
fish. Small bunches of dried herbs soaked in water
will add fragrance as well as flavor. Rosemary, bay
leaves, and oregano add great flavors to grilled items.
To give your food those great looking grill marks, simply
allow the grilling grid to heat thoroughly before adding
the food. Once the grill is very hot, turn down the flame so
the food doesn’t burn when cooking. Apply seasonings
to the items you will be grilling and also apply an oil
so it doesn’t stick to the grill. Some cooks use butter,
others prefer a vegetable oil. You can use a spray, brush
or drizzle to apply. Burgers have enough fat in them and
will need little oil, while other items such as seafood,
chicken, vegetables, certain cuts of beef and pork will
need a nice layer of oil to ensure they don’t stick. If you
have a clean cloth, you can roll it up tightly and soak
it in a vegetable oil. Use tongs to brush the grill irons
with the oil soaked towel, when using this method, you
will get flare up, allow the oil to burn off and then place
the item on the grill. When applying butter or oils to the
meat be careful not to add too much; it can cause the oil
to ignite, and it will also leave an unpleasant oil film on
the meat. Be careful not to rush thick or slow cooking
meats. Turn down the flame and allow the process to
take its course.
If you don’t have a char grill in your establishment
there are many different ways to infuse grilled flavors
into your food. Cast iron pans and grill plates are very
common. They will offer a great flavor and a wonderful
plate appearance.
Fresh Seasonal Marinades
Marinade for Flank Steak, Pork, Salmon
This marinade only needs to dissolve and marry for
5 minutes. Very simple to make and use. Be careful
not to keep on direct heat, or the sugar will burn,
Place on a low temperature part of your grill or pan.
•Soy
sauce, ¼ cup
•Water,
¼ cup
•Brown
sugar, 2 Tbsp.
•Salad
oil, 2 Tbsp.
•Garlic
Chopped, 1 Tbsp.
Procedure:
Mix ingredients with a wire whisk and allow
5 minutes for sugar to dissolve. Marinate meats for up
to 4 hours. This recipe will marinate 5 pounds of meat.
Marinade for T-bone steak, Porterhouse,
Pork, Chicken, Seafood
This Marinade will grill, bake or sear very nicely. It
will bring enhance flavor while cooking the protein.
•Cloves garlic, 4 (minced)
•Olive oil, 1 cup
•Soy sauce, ¾ cup (low-sodium variety)
•Lemon juice, ¼ cup
•Worcestershire sauce, ¼ cup
•Dijon mustard, ¼ cup (prepared)
•Black pepper, to taste (freshly ground)
Procedure:
Put all the ingredients in a bowl and whisk
until smooth. Pour over the protein and allow
a minimum of three hours to marinate.

friends. When you use a Facebook business page to
share information, you are potentially reaching the
number of fans you have multiplied by at least 130. That
is a huge reach for the use of a free tool!
To register your business on Facebook, you must first
have a Personal Account. The website will guide you
through the steps at www.facebook.com. The next step
is to create a Business Account at www.facebook.com/
pages/create.php. To access and further customize your
account; log in to your personal account, select account
from the right hand corner and scroll down to Manage
Pages. All changes made on this page will be in realtime and completed immediately.
Once you have a following of friends; a section to the
right of your page called insights will allow you to
track your page. You will know how many times your
page has been viewed, how many “likes” you have, the
number of people who have “unliked” your business,
wall posts, reviews and more. Information regarding
your business page will also be emailed to your in-box
on a weekly basis. For maximum effect, update your

•Worcestershire sauce, ¼ cup
•Dijon mustard, ¼ cup (prepared)

The season is here for sizzling grilled entrees full of
intense, smoky flavor. Grilling meats, vegetables
and select starches is a great way to keep your menu
seasonal and fresh. When choosing items for the
grill, make sure they are able to withstand the intense
heat. It’s also important that the flavor profile is not
compromised by the grilling process. Very light meats
may be overpowered by the intense heat and grilling.

Helpful Grilling Hints
Inspect vents and gas valves to make sure that ashes
from previous use are not clogging them. If you would
like to try some flavored hardwoods, they can be a great
source for additional flavors. They should complement,
not overpower the food you are preparing. Soak
hardwoods in water for 30 minutes before using. When
placed in your grill, they should smolder and smoke
but not burn. Grapevine cuttings give great flavor as do
shells from nuts such as almonds, and pecans. Certain
types of tea give off a nice sweet smoke when grilling
fish. Small bunches of dried herbs soaked in water
will add fragrance as well as flavor. Rosemary, bay
leaves, and oregano add great flavors to grilled items.
To give your food those great looking grill marks, simply
allow the grilling grid to heat thoroughly before adding
the food. Once the grill is very hot, turn down the flame so
the food doesn’t burn when cooking. Apply seasonings
to the items you will be grilling and also apply an oil
