Mix beans, onions, celery, mustard, brown sugar, molasses, and ketchup together. Place in pans and bake at 350 for approximately 45 minutes. Meals for 125 People American Chop Suey Ingredients Weight Ground beef 10 pounds Macaroni 8 pounds Onions, chopped 5 pounds Green peppers, chopped 3 pounds Amount Whole garlic, minced 3 cloves Tomatoes, peeled Three #10 cans Tomatoes, pureed Two #10 cans Oregano to taste Basil to taste Salt and pepper to taste Preparation Cook macaroni as directed on box. Brown ground beef, onion, and green peppers. Mix all ingredients together and place in three large flat pans. Meals for 125 People Tuna Noodle Mushroom Casserole Ingredients Weight Noodles, medium 4 pounds Amount Water, boiling 6 gallons Salt 1/3 cup Margarine or butter, melted 10 ounces Onions,dehydrated 1 ounce Mushrooms, sliced or stems/pieces one 1 pound can Tuna, drained 7 lbs Pimento, drained 17 ounces Cream of mushroom soup Cheese, cheddar, shredded 3 #10 cans or 7 soup cans 2 pounds Tabasco sauce Bread crumbs, dry one small jar 1 1/4 Tablespoons 1 1/2 pounds Margarine or butter, melted 5 1/4 ounces Preparation Cool noodles in boiling water and salt. Saute onion and mushrooms in margarine or butter. Flake drained tuna coarsely. Drain and dice pimento. Add 1 1/2 pound of the cheese and tabasco to cream of mushroom soup. Mix in noodles, sautéed vegetables, tuna, pimento, and cheese, lightly but thoroughly. Place in greased pans. Top with bread crumbs and remaining 1/2 pound of cheese. Bake at 450 degrees for 15 minutes. Meals for 125 People Beef and Vegetable Stew Ingredients Weight Margarine 1 3/4 pounds Stewing Beef, cubed 32 pounds Onions, 1/2" diced 5 pounds Flour 1 pound Amount Beef stock 8 gallons Bay leaf 5 each Tomato paste 3/4 pounds Carrots, 1/2" diced 6 3/4 pounds Celery, 1/2" diced 6 3/4 pounds Potatoes, 1/2" diced 7 1/2 pounds Peas, frozen 2 1/2 pounds Salt, pepper, other seasonings to taste, as desired Preparation Brown beef cubes in margarin. Removed from pan and reserve. Sauté onions in fat until transparent. Add flour and cook roux. Add stock, seasonings, and tomato paste, stirring until smooth and thickened. Return beef to pan, cover and simmer 1 1/2 hours or until beef is tender. Steam carrots, celery, and potatoes until fork tender. Add to meat mixture. Cook 15 minutes more. Transfer to pans for serving. Meals for 125 People Shepherd's Pie Soup Kitchen Meal (adapted from www.peekskillpresby.org) Ingredients Weight Potatoes, or instant potatoes 25 pounds Amount Butter 2 cups Milk 4 cups Onions, diced 3 pounds Ground beef 14 pounds Green beens, frozen or canned 13 10 once packages Corn, frozen or canned 13 10 ounce packages Paprika one cup Nutmeg 1/2 cup Sage, dried 1/2 cup Salt 1/2 cup Pepper 1/4 cup Preparation Thaw or drain, green beans and corn. Boil potatoes until tender. Mash with milk and butter or margarine. Season with nutmeg, salt, and pepper. Set aside. Sauté onions with paprika. Add ground beef and sage. Cook until meat is browned. Spread a thin layer of potatoes in the pan. Add half the peas and corn, then the ground beef and then the remainder of the peas and corn. Top with mashed potatoes. Dot top with flakes of butter, and nutmeg, paprika, salt, and pepper. On day of serving, bake at 400 degrees F. 40-50 minutes, or until golden brown. Can also be baked ahead and reheated. Meals for 125 People Meat and Noodle Casserole Ingredients Weight Ground beef 12 pounds Amount Green peppers, chopped 7 large Celery 9 ribs Onions, chopped 8 medium Noodles, large 9 packages Tomato soup 16 10 ounce cans Cream of chicken soup 9 10 ounce cans Crean of mushroom soup 9 10 ounce cans Preparation Brown meat. Add pepper, celery and onion. Cook noodles, drain and add to meat mixture, along with soups. Pour into pans and bake 30 minutes in a medium oven. Meals for 125 People Cheeseburger Macaroni Ingredients Weight Ground beef 15 pounds Macaroni 15 pounds Velveeta, or other generic cheese 15 pounds Amount Milk Gallon Salt and pepper to taste Preparation Brown and drain ground beef. Cook macaroni, drain, and add to beef. Chunk cheese and add to beef and macaroni. Stir in milk and salt and pepper. Make on stove top or bake with crushed cracker topping Optional additions: onions, mushrooms, ketchup, mustard Meals for 125 People Tuna Noodle Casserole (adapted from ivylanedesigns,blogspot.com/2012/03/tnanoodle-casserole-for100.html) Ingredients Weight Noodles or other pasta 7 pounds Butter or margarine 1.5 pounds Onions, chopped 2.5 pounds Celery, chopped 2 1/2 pounds Amount Flour 4 cups Milk 2 gallons + one quart Chicken stock 2.5 gallons Pepper 2 Tablespoons Parsley, dried 1.5 cups Salt 3 teaspoons Mild cheese 5 pounds Tuna, canned, water packed 14 pounds Lemon juice Peas, frozen 2 cups 4 pounds Preparation Heat salted water to rolling boil Slowly add noodles. Stir constantly until water boils again. Cook for six minutes. Do not overcook. Drain well. Set aside. Melt butter or margarine. Add celery and onions. Cook for 5-6 minutes. Add flour, stir until smooth. Add milk, chicken stock, pepper, parsley, and salt. Stir in cheese, a bit at a time. Cook for 30 minutes or until thickened, stirring and scraping bottom of pan continuously. Stir in peas. Add cooked noodles, tuna, and lemon juice. Cook over medium heat for 6-8 minutes. Pour into 6 medium half steam table pans, or 3 full steam table pans. Cover the pans with foil and refrigerate until the next day. Remove from refrigerator and bake at 400 degrees for 3 hours, removing foil the last 30 minutes. Meals for 125 People Salmon-Macaroni Salad Ingredients Weight Salmon, canned, drained 7 pounds Macaroni, elbow uncooked 4 pounds Onions, dehydrated 1 ounce Celery, diced 4 pounds Carrots 2 pounds Pickles, dill, drained, chopped Parsley, chopped Amount one quart 3 ounces Salad dressing 2 quarts Vinegar, cider one cup Salt 3 1/2 Tablespoons Celery seed 3 Tablespoons Preparation Drain salmon, remove large bones and heavy skin. Cook macaroni and chill. Add salmon to macaroni. Add celery, carrots, rehydrated onions, chopped pickles, and parsley to macaroni and salmon. Mix to distribute ingredients uniformly. Blend together salad dressing, vinegar, salt, and celery seed. Add dressing to salad ingredients and mix lightly. Chill. Meals for 125 People Tuna Salad Ingredients Weight Tuna, canned 9 pounds Eggs, hard cooked Amount 3 dozen Onions, dehydrated 1 ounce Celery 4 pounds Pimento 1 cup Pickle relish, sweet 4 cups Lemon juice 1 cup Pepper 1 teaspoon Salt 1 1/2 Tablespoons Salad dressing 1 quart Preparation Drain tuna and separate into approximately 1/2 inch chunks Cook eggs, peel and cut into quarters lengthwise and into third crosswise. Drain pickle relish and pimentos. Add eggs, celery, rehydrated onions, pimento, pickle relish, lemon juice, salt, and pepper to tuna fish. Add salad dressing; mix lightly to blend. Chill. Meals for 125 People Marinated Green Beans Ingredients Weight Green beans, whole canned Onions, thinly sliced or chopped 4 #10 cans 1 pound Green peppers Vinegar, cider Amount 10 ounces 4 pounds 3 quarts Salad oil 1 cup Water 1 quart Sugar, granulated 2 pounds, 8 ounces Salt 3 tablespoons Celery seed 1 1/2 Tablespoons Mustard seed, whole 1 1/2 Tablespoons Preparation Drain green beans. Thinly slice or chop onions. Dice or chop green peppers. Add onions and peppers to green beans. Mix vinegar, oil, and water in a steam kettle or large saucepan. Add sugar, salt, celery seed, and mustard seed, Heat to boiling. Pour hot dressing over green beans, pepper, and onion. Refrigerate overnight. Serve on lettuce leaf or in dishes.
